Fun fact definitely use soy milk with the apple cider vinegar as the Apple cider vinegar creates proteins links within the soy milk and helps create a structure within the cake. This will not be replicated nearly as well with other milks i.e. almond and oat.😊

Yummy cherry cake, I don't use coconut oil, so I will just substitute that for Apple sauce. I never baked before I went vegan now I can bake muffins, brownies and cakes. Sand castle and mote for the water around the castle good times.

As a child, every year for my birthday, I would have a cherry chip cake with cherry frosting. It was a cake mix that is no longer sold 🙁 the chip part was little cherry pieces. It was so good and this makes me think I can relive my childhood! Are the cherries here, candied or maraschino? On a baking note, isn’t sugar usually considered a wet ingredient? Yes, sugar is a wet ingredient chemically, but only for the duration under heat in the oven...then it gets back to its former shape...so idk...

I tried it using natural maraschino cherries because I couldn’t find candied cherries that weren’t full of high fructose corn syrup and red dye. That said, I love this cake! I didn’t even make the frosting because I was too impatient. Thanks for sharing this with us! I will be making it again and again!

Please experiment with baking. Follow the instructions for a while. But like anything, once you understand the rules you can strategically break them. Plus, a lot of great baking recipes came from accidents and substitutions.
