Eastern NC Vinegar sauce has Crushed Red Pepper Flakes in the mix. I grew up 20 min. from the NC border and have never seen this sauce without the Crushed Red Pepper Flakes.

Hi from RVA! I came across this tonight and immediately made it for some pulled pork I did yesterday. I switched the celery salt with oregano instead and it was amazing! Thanks for sharing this.

theodore holley not sure how you could make it thicker since it's a NC Style sauce. It's supposed to be thin. More of a finishing sauce. Glad you did your own thing with it!

theodore holley well the longer this sauce sits the stronger it's going to be. The flavors start mending together. But if made right the vinegar flavor shouldn't over power the other flavors. If I'm making it for myself it doesn't go in the fridge. It's just vinegar, it doesn't need to. If I'm selling it I'll bottle it in mason jars and vacuum seal it.

Well it does have apple cider vinegar, dark brown sugar but I substituted red pepper for cayenne. Gives it a better bite and easier to use in a squirt bottom 😉

One Caution for building this recipe. Be very careful of the celery salt. It can be overpowering. Maybe start with a small amount and add to taste. My first try at making a sauce with celery salt was ruined because of the amount of celery salt.

Man, I think you're forgetting more than that Wooster sauce. Crushed red pepper and some allspice would really pepper this sauce up. Not to mention it's the more traditional style.

Yasser Arafat actually a true NC style vinegar sauce is just that. Basically vinegar. So if you know what vinegar is then that's your answer 👍🏼

Smokin' Q RVA Chef D i watched this and made this sauce immediately after. Had some ribs and poured this on after i heated the ribs up. DAMN this stuff really made them taste good. My wife also liked the sauce so good job. Delicious...

Yes, North Caroline sauce is basically a spicy mop.... it's thin. Traditionally you would use this to mop the pork as you smoked it and then use it to finish once you've pulled or chopped.

Neal Dunbar actually it is. It's my version of eastern Carolina which is a spicy vinegar based. Southern Carolina is a mustard based. Give it a try and let me know how you like it!

He's likely taking exception with the sugar, garlic, onion and celery powders, paprika, Worcestershire sauce and no crushed red pepper. The core of eastern NC BBQ sauce only has four ingredients, apple cider vinegar, salt, black pepper and crushed red pepper, today most give it a dash of Texas Pete. Adding sugar is going to trigger any purest big time the only more serious sin would be adding ketchup as that adds both sugar and tomato to it.
