That's interesting about the anchovies. I use about 2-3 teaspoons of Vietnamese fishsauce and my friends love it! What's interesting is that Vietnamese fish sauce (nuoc mam) is made from pressed, fermented anchovies. It really imparts just the right amount of saltiness and umami to each jar of BBQ. I recommend the 3 crab brand for anyone interested in trying.

I can't believe he passed away.... he looked like a great, fun man to know and be around. I have used a few of his recipes; the loaded potato soup, pizza crust, bowl of Red, biscuits & gravy, all have become staples in the last year...now I just have to try more in memory of Steve. I was coming on to ask what the wattage was of the Precision Induction Cooktop he was using or would recommend...I just have to get one after hearing him rave about it. We live on the west coast. Spicy is our middle name. And anchoves are amazing! Melting into spaghetti sauce, or even salad dressing. You'd be amazed. Try sweating the onions in a little bit of butter before you add them to the sauce. They melt down and almost disappear.

I just recently got in my kitchen lab and put a sauce together very close to this one, but this one definitely has several ingredients I want to try. It looks absolutely delicious. Anyone who has tried to make their own bbq sauce has got to try this recipe...I guarantee you that you won’t be disappointed...it is one of the best sauces I have ever tasted...when I was making it I thought that there might be to much sweet going into this recipe but trust me...just follow the recipe and you’ll be glad you did!

Hey Shotgun! I'm with you about the black pepper! I love It! Gotta tell ya out this one...I was on a job two weeks ago and a guy cut the top of head pretty good! It was not nice BUT another guy took him out to his truck and put BLACK PEPPER on the wound!!! This is absolutely true! The wound closed right up and stopped bleeding right away! I saw the guy the other day and the wound healed up real good and he said it didn't did not burn or hurt him at all. Well so he said! Turns out the pepper guy was an former Navy diver! He said "you'd be surprised what they teach ya"! Just wanted to share this, another reason to LOVE black pepper!

Shotgun, this recipe is just awesome! Nick, I've heard of people using all sorts of things to cauterize wounds. A couple that come to mind are coffee grounds and sugar. Although I wouldn't use sugar if you're diabetic.

I love anchovies. I always add them to my homemade tomato sauce. People have no idea that the anchovies are in there but it really makes the sauce delicious.

+ Yvonne Romano, I totally agree, Anchovies....they got that flavor thing kicked-up! In some Italian dishes, Asian and American foods, I have used anchovies in all of them. They have a wonderful bold taste that can change a "kinda ok" meal into a "where in the World has that been all my life" food! Y'all right, just don't tell nobody! I add them to soups, stews, really all kinds of dishes. They are great to use. Steve knows about those anchovies, lol! that's a good thing.

So i just randomly stumbled across this video, I saw the doll In the background and made me think and then it hit me! When I was about 5 years old, we lived in Tennessee, my grandparents came to visit and took me to a show on like and old river boat. The show was Shotgun red! Oh my god the flash backs this just gave me. I don’t know if I’ve ever laughed so hard to this day and my grandma bought me my own shotgun red doll and a vhs tape of a show. I watched that tape on repeat daily for years! I’m so happy to have found this channel and thanks for the amazing childhood memories!!

Grate your onions on the [ fine ] side of a box grater...and, I use cast iron on my induction cooktop all the time and you can use an [ electric ] fry pan...and if you use an "Emulsion" blender or a stick blender, it will get rid of any chunks & you can also run the sauce through a fine-mesh strainer...

Adding anchovies is a brilliant idea because it has natural glutamates and enhances umami in taste. I will make this recipe and then a version with bourbon added.

I use anchovy fillets instead of msg as they are loaded with glutamates. I have nothing against msg but I prefer anchovy. Worcestershire sauce is actually a cured/fermented anchovy fish sauce. It is one of my favorite sauces. But I put anchovy in with my mirepoix, roux, etcetera. All of my soups begin with onion, celery, carrot, sweet corn, Bell pepper and anchovy. It makes a great flavor base.

If you want to remove heat from a dish when you have accidentally added too much beforehand, you can easily do so by adding just a splash of lemon juice. I've done this on multiple occasions including a cocktail that calls for ghost pepper vodka yet when the lemon juice is added it makes it so that even people who cannot stand heat are able to drink this cocktail without a problem.

This is the best BBQ sauce I’ve ever made! Sweet, tangy, and we like it with a little heat! I can’t wait to try it in a couple of days once the flavors really bloom! I did add a squirt of garlic paste. The anchovies really did their thing as well! Thank you so much for sharing this deliciousness with the world.

I've been on a Shotgun Red cooking kick lately and bought a pork shoulder to make pulled pork sliders. What an amazing sauce and the perfect accompaniment to the pork! And fun to make! My favorite bbq sauce is very simple to make if you are smoking a brisket or some other cut that drains lots of juice while in the smoker. Put a catch pan/water pan under the meat. You can start with a little water in it but not necessary. After the meat is done, remove the pan and transfer juices to a sauce pot where you can skim the grease off of the top. Or you can use a fat separating measuring cup if you have one. Heat to a simmer then simply add ketchup, yellow mustard and grape jelly to taste. Add enough ketchup to get the desired sauce consistency and then about a quarter as much mustard and enough jelly to balance out the tartness of the ketchup and mustard. Done. Best sauce ever and will compliment your meat since it is made from the juices that came out of it.

Anchovies are in everything that has an umami flavor and is delicious. Worchestershire sauce, Italian tomato sauces, and anything derived from those so pizza, pasta, steak sauces, etc

You would need to pressure can it to store it for that long of a period. It will store in the fridge for a few weeks.

I use two of those induction cooktops just like yours and I use either cast iron or steel all the time. As long as a magnet is attracted to your cookware, it will work with an induction burner. Cast or any kind of aluminum will not work .
