Beet greens and beet stems are the best part of beets. I saute the greens to use on sandwiches, chop and saute the stems separately they're a fantastic side dish. You're really missing out if you just toss the stems and greens.

Sautee like spinach... separate thick stems from leaves and put first in pan... they tale a bit longer. Then when done... a Lil lemon... Delish. I dont peel beets either. Just scrub and take excess roots off

I love a variety of veggies and really want to eat beets but can't handle the flavor..like eating dirt to me. I love spinach raw or cooked. Do the beet greens also have that same flavor as the root?

@@christinahurt7505 if I hadn't picked them, I never would've known or believed they were beet leaves. We wilted them, and they tasted like spinach x2. We haven't tried them raw yet, because the leaves are large and possibly tough by the time the beets are ready. But if you only want the leaves, you wouldn't have to wait, and they grow quickly. I wonder if the 'dirt' flavor you sense from beets is the same or similar as the effect with cilantro for some people...

I used to roast beets by wrapping them in foil and roasting until soft. When cold I would slice them and serve on greens with goat cheese and pickled onions. Good stuff.

Try baked beets with pineapple and a little brown sugar. Beets with whole canned cranberries is also good, or make the cranberries from scratch if you like

They're best pickled. Believe me. Par boil them, do not throw away the water you use for boiling. They need to be peeled before boiling. Chop them up to your like. Not too small. Place them in a jar, add some vinegar, garlic along with the water you used for boiling and cap it. Wait for a few days and they're ready to eat. I suggest using them in salads. Full of vitamins and minerals.

You can ferment beets into pickles in a salt brine (1 tsp salt per cup of water). After a week or two, depending on the temperature of your kitchen, the beets will be tangy and pickled. Great with sliced onions, celery, and/or other vegetables. Check recipe videos on youtube.

I grew these things when I lived in San Diego in a community garden. I would prepare two side dishes from the vegetable - the root I would steam and the greens I would sauté with garlic and olive oil. Delicious and nutritious!

I really enjoy beets boiled in water and vinegar, skin on, stems off. When fork tender run under cold water and the skins will just rub off. Slice and serve cold. Delicious.

Beet sandwiches are AMAZING!❤ Roast whole beets, slice and put on toasted everything bagels with cream cheese (or vegan cream cheese), salt and pepper. Could add avocado, onion, or other things or veggies if you want, but they are delicious just as I described. Picked ginger would be good, too!

I enjoy beet hummus using salted, roasted beets, cumin, roasted walnuts, sesame oil, olive oil, lemon juice, and apple cider vinegar. Mega yum with hot pita or crusty French bread.

Thank you for sharing your recipe- I love beets as well ! I mostly roast them in ghee,which has a higher and longer temperature tolerance and gives a nice flavour. I find that it is better to salt them late or after in the cooking process, as they will release less water and the beets will roast rather than stew. My favorite way to eat them is tossed with salt,pepper,a bit of balsamic vinegar and topped with lashings of sour cream!

This looks fantastic. Usually I just cut the ends off and boil the beets whole until you can pierce them with a fork. Then I let them cool, peel off the skin (don't like the skin) then slice and eat. I eat them plain with no seasoning, but I'd love to try this recipe. That would be a nice recipe for golden beets as well, which I adore. I can't find them very often, though. But when I do see them, I snatch them up. They're so good.

sauté beet greens with eggs for a tasty breakfast! or u can also freeze beet greeens to add to soups in winter for a spinach substitute, they hold up better structurally in a soup and have a more mild flavor than spinach for those who dont like bitter!

Nice! I cook beets similarly. At the end however, I mix a 50/50 ratio of honey and balsamic vinegar and toss with fresh thyme to cover the beets.

I dehydrate my beet greens also spinach, parsley, any good greens then I powder them in the blender for immune and vitamin boost for way less expense. Love roasted beets.

Grilled beets have the best flavour. When they're boiled, all the nutrients end up in the water. My fav variety of beets is Cylindra. They're long, cylindrical in shape, crisp and don't get woody & are just perfect for canning, if you like pickled beets.

Try roasting in balsamic reduction and salt and pepper in a foil pouch. Make the reduction yourself with balsamic vinegar boiled till it reduces or buy it in grocery stores. Bake. 350. Or if you want toss in olive or sunflower oil first. Yum

I understand that beets, and the greens (though very nutritious) are high in OXALATES. This may not be a problem unless you have kidney disorders. I skin them the same way, minimally. And I rinse them. Your method looks great! I stay away from canola oil, vegetable oil, and other seed oils. I'd use olive oil. For certain I will try YOUR METHOD. Thanks!

I like to cook beet tops and Swiss chard together. When done to your liking, add garlic butter, stir and serve hot. This way to cook beets sounds quite tasty, but I prefer avacado oil. Cheers.
