"When Chef Christophe gives us his recipe for steak tartare, it’s just WOW! Simple and effective, all that remains is to sit down at the table :)
The recipe for 2 people:
For the meat:
300 g of beef fillet
1 shallot
2 tbsp capers
1/4 bunch of flat-leaf parsley
6 pickles
For the sauce:
2 egg yolks
20 g of sunflower oil
worcestershire sauce
mustard
tabasco
salt
freshly ground pepper
Preparation :
Place the meat in the freezer 20 minutes before starting the recipe.
Prepare the filling:
Cut the pickles into not too thin strips then into cubes
Mix them with the capers
Cut the shallot in half. Finely chisel it.
Add it to the caper and pickle mixture.
Coarsely crush the flat-leaf parsley.
Preparation of the sauce:
Clarify the eggs.
Add the mustard.
Add a few drops of Worcestershire sauce
Whisk
Season with salt and pepper.
Whip up the sauce. To do this, pour a small drizzle of oil into the mixture without stopping whisking.
Add 2 drops of tabasco sauce.
Preparation of the meat:
Cut the meat into slices of approximately 1 cm
Cut the slices into strips then into 0.5cm cubes
Assembly :
Mix the meat and the filling with a fork
Add the sauce little by little until you get the perfect consistency.
