500 g pork throat
500 g fresh pork belly

Preparation :
Cut the shallots into small pieces and sweat in butter
Let cool
Cut the meats into 3 cm cubes
Season and add the cognac
Leave to rest overnight
Chop meat on medium grill
Dilute the starch in milk
Add to the Fray
Fill the terrines to within 2 cm of the rim, packing well
Place the aromatics on the surface
Roast in the oven at 180°C for 20 minutes
Cover the dish and lower the oven to 150°C
Check cooking at 70°C at heart
Leave to cool for 30 minutes outside
