Please note the very important step mentioned at the 5:22 time stamp: if you choose to freeze your bundles, it is important to remove the bundles from any plastic bag (or container that was holding them) and allow them to become acclimated for a few days before returning them to a large plastic bag and/or food-grade container for long-term storage. This is an important step. I do mention this in the video, but didn’t emphasize it enough. I’m due to reshoot this video, and will be sure to make this a bit clearer going forward. Hi Denise. It’s okay to freeze in paper bags, yes. Just make sure you allow them to come to room temperature before storing away in plastic bags or buckets. I’ve never needed to sift any flour upon opening. However, if you do find any evidence of bugs, you certainly can sift to remove anything undesirable. Thanks for watching 😊

Hi Jane :) I like to place some bay leaves in my 5 gallon storage buckets as they are a natural deterrent for insects and critters in general; they don't like the strong scent. I've never had any of my stored goods compromised by the scent :) hope this helps... thanks for watching 😀

What a clever idea! I was considering packing some flour in mylar bags, but have no space in my freezer to put flour and dont want to wait for a harsh cold winter to risk putting it outside and get wet... Now I will divide it into the exact amount I need to make breads and otehr recipes and label on the bags how much is in them and freeze by batches! Thank you so much for posting this! Going to watch your artisan bread video next. I have yet to find a recipe to make bread... Not my thing, but my son loves to bake!

Could pre-measure the yeast and salt in separate smaller bags and bundle with the flour so you have a complete recipe to barter/trade (assuming they can provide their own water).

Salt, absolutely. The yeast, however, has a much shorter shelf life. If one found themselves in a situation where bacteria g was beneficial, it would definitely be advantageous! You can get several loaves from one little envelope of yeast! Thanks for watching and commenting 😀

Those size packages are also great for barter. ( I hope to need to barter, but still has to be considered). New subscriber! We had to quarantine until we were 2 vaccines and I took that time to try lots of bread recipes, canning, and gardening. I'm like you, I will gladly bake bread for anyone that needs it. I will probably go down in an SHTF situation because I share too much LOL!

I enjoyed this video. Some preppers balk at the idea of storing white flour, but it really makes sense to do so, even for people like me who have a huge amount of wheat berries and a grai mill. I can easily rotate through even though over 50 lbs of white flour and get nowhere near the expiration date. Storing the newest flour in the freezer before rotating it into the pantry, I could probably do 100 lbs.

I did the paper bag storage ideas. I put 4 cups in each bag so that there was enough for one loaf of bread. Then it got to be too much. So I started sliding the 5 pound bags in a vacuum bag and sealed them.

I'm coming to the conclusion that I might make vacuum sealed bags, out of the entire flour bag or partial bag, place them in a sealed bucket and place it in the basement. I don't have room in my freezer (or time) to freeze it and flour storage in a garage in winter is coming to an end so... 😊 Thanks for this video. Thumbs up 👍 given.

I love my Komo grain mill, heads up on any food mill, you will get a lighter whole wheat bread if you use a fine mesh sifter to remove the larger pieces of bran. Also Azure Standard 100% red whole wheat ultra unifine flour is a wonderful 100 % whole wheat flour for Artisan breads. I make a loaf every 5 days so a lot of flour passes through my house in 25 pound bags! Thanks for the video!

@@countrymamamusings7701 If you are looking to incorporate more whole wheat, you might consider trying Azure Ultra Unifine Red Wheat with some white bread flour or A/P flour. I use 200g white to 300g wheat, makes a beautiful loaf my ‘white bread only’ husband will eat. Have fun shopping with Azure, I love the experience!

@@janetsysuarez5463 the recipe I use is 1/2 of the Saturday bread loaf in Ken Forkish’s book Flour, Water, Salt and Yeast. 500g bread flour(I mix whole wheat and white) 320g water 90-95 degrees, 2g yeast and 10g salt. The recipe can be started in the morning and ready to bake at night. I am pretty sure you can find the instructions online. Good luck and enjoy!

With daily developments in Europe and our prez's behavior, I am storing food as if a category 5 hurricane is coming straight to South Florida. I am preparing for at least one year of food. I dont have a freezer, the one in my fridge is not big enough. So I am using the oven canning as my system to store dry foods...

if you put those paper bags into mylar you can add oxygen absorbers and when you use a hair straightner to seal them to the vornet use a straw to suck out excess air and seal. in Australia in the heat the mylat protects from heat. p.s. you can use rubberbands, easier than the green tape. bless you.

Brilliant - KISS - keep it simple stupid (sorry) I was on the verge of wasting a bundle of money on an elaborate system of mylar bags and O2 absorbers to accomplish what you did with small batch paper bags. However, the ONLY thing missing from your tutorial was the size of the brown bag - I went on Amazon and bought 2lb and 3lb bags knowing I would use them but I was only guessing which size you use. I really appreciate it when someone brings a simple affordable technique to food storage - Thank you.

FWIW, I plan to vac pack the brown bag bundles to secure them and save a bit of space. Still WAY cheaper than the mylar/O2 packet method. Excellent tutorials, keep up the good work!

@@countrymamamusings7701 Since finding your video on this subject I have expanded the technique to store rice and beans. I scoop 1lb into the brown bag, roll it up like a burrito and fit 3 "burritos" into a mylar bag for vacuum packing. That breaks the bulk rice & beans down to reasonable usable packages to reduce waste & spoilage down the road when we open a pouch. WAY better than storing bulk in 5gal mylar in a bucket... One thing I like about the brown paper is it seems to provide a bit of moisture control, vs a tight plastic bag where condensation might develop inside the bag. The paper kind of "breathes" to wick moisture away. This is one of those head-smack_why_didn't_I_ think_of_that?, ideas - THANKS! FWIW I use the cheapest masking tape to wrap the "burritos" which makes a perfect label to write on.

putting it in the freezer kills live bugs, but signals eggs to hatch. Not good. That's why some people put it into the freezer a second time after a few days.

I dont see why not! I, personally, haven't don't so, yet. I picked up a BUNCH of boxed yellow cake mix on sale and just removed the cardboard box and kept the mix in the plastic sealed bag and put them in my buckets... but this method should work! Hi John, it is important to consider the ingredients of each item you are looking to preserve. With regards to the Blueberry Muffin Mix and the Country Gravy Mixes ~ these contain palm oil which, over time could become rancid. If it were me, I’d vacuum seal the each mix, respectively , either in a mason jar or Mylar bag and use within a year or two past the Best Buy date, rotating your oldest stock to be used first. Having said that, I’ve done the same with boxed cake mixes and they’ve been fine going on three plus years now. When you open your stored mixes, just be sure to give them a good look-over to check for any obvious issues (mold, rancid smell, etc) and use your best judgement. With regards to instant powdered milk, according to the USDA, an unopened package can be stored indefinitely. If opened, be sure to store in a vacuum sealed container to ensure a long shelf life. With regards to the tuna packet; the packages have a printed shelf life of three years PAST the best by date printed on the packages. However, when stored properly, this can be extended upwards of five years. I hope this helped, and thanks for watching 😊

Hi, thanks for watching and for your question. When talking long-term emergency stores of flour, you’ll get the best results, unfortunately, with the highest processed of flour; AP bleached. Unbleached is also a good alternative, but the shelf life may be slightly less. Avoid attempting long-term storage of wheat, gluten-free, or nut flours, such as almond flour, as they will go rancid very quickly due to their oil and/or fat content. If you happen to get a surplus of self-rising flour, you can store it, but it’s import to note that the components that make it self-rising may lose their effectiveness over time, so it’s probably best to use those types up and store the regular AP 😌. Good morning, J Mom and welcome to the Farm. Flour stored properly in this fashion can last several years; perhaps 10 to 20 under the right conditions. It's important to check your storage containers from time to time to ensure there's no issue with moisture, etc. Remember that the craftiest of rodents can chew through the edge of a plastic bucket! I do my best to rotate my bundles, using the oldest first, but still have flour in good shape after a couple of years. **It's important to note that I have pinned a comment about my statement aruond the 5:20 time stamp. Make sure if you're going to try this, you remove your bundles from the plastic bags after taking them out of the freezer... they need to become acclimated to room temperature for a few days before storing them long term; especially if you're going to return the bundles to a bag of any sort... you don't want to end up with mold. I stated this in the video, but didn't really make it a prominent statement, and it appears some have missed that little nugget ;) Thanks for watching, and I hope this works for you... we love it!

Hello, there ☺️. I’m not entirely sure foil will help with the moisture issues. I think if you store on the paper bag, then place in a quality ziploc-type bag and remove any excess air before sealing, it would help tremendously. For long term, you might consider getting some Mylar bags and oxygen absorbers. Hope this helps ☺️

Good morning, Denise. You know, old habits are hard to break, lol. My mama got me in the habit of freezing my flour early on, and I haven’t changed my ways. If moisture is of concern, you certainly can eliminate that step as the elimination of all oxygen via the food saver vacuum should suffice. I might set aside some time this year and reshoot this video … having said that, I do need to share that I, personally have not experienced any moisture or mold issues with the many bundles I’ve put up in this manner 😊. Hello Hope. I keep the flour in the freezer a minimum of three days, and allow the flour to return to room temp for a few days. I get the buckets at any big box store; just check the bottom of the bucket to make sure it has the food grade symbol on the bottom.

Did I miss what is your definition of "LONG TERM STORAGE "? Is it 6 months,1 years?, Is it possible to store and have usable flour up to 2 year's? Hi Gee … you don’t need to freeze, it just helps ensure the elimination of bugs/eggs. Keep in mind that wheat flour will go rancid relatively quickly, so avoid this method for anything other than all purpose flour. I have had flour in my containers now for 3 yrs without issue. There are claims that flour can last several years (5, 10, etc) when stored properly. I do, however, like to rotate my bundles; replacing older with newer …so far, I’ve had nothing but success. The key is to check on your supply at regular intervals and rotate your bundles 😊

Hi Rachel, Thanks for watching. Different grains/flours certainly have different shelf life expectations. For instance, this bleached flour can last upwards of 10 years or more, but wheat flour tends to go rancid in a shorter amount of time and should be used up within months. Being that you are working with an organic, gluten-free product it may have it's own unique perimeters. I looked up the product you mentioned and I so see that there are some reports that consumers have been able to store, long-term, in their freezer, with success. I would suggest conducting an experiment, in a small quantity, to see what results you end up with. Perhaps packaging a bundle as shown here and placing it in your long term pantry, and try it in a baked good six months out to see how it holds up. Be sure to smeel it to see if you pick up a hint of the product going rancid at all. In the meantime, I'd feel comfortable, based on what I read form other consumers, keeping your GF flour in the freezer long-term. Just be mindful (as reported by another viewer) the packages CAN become susceptible to condensation once you remove them from the freezer, so make sure to watch for this on especially humid days. If you notice some sweating on your package and you're going to use that GF flour that day; no worries. But, if there's sweating and you're planning to keep the bundle in long-term for that experiment, you may want to ensure your packaging is thoroughly dry before doing so; even changing the bag, if need-be. I, myself, have never experienced any difficulties with the humidity/condensation aspect one viewer experienced. SO, just want to make sure you're aware :) If you try a 3 or 6-month trial, I'd love to hear back from yoyu to see how it went! I'm sorry I couldn't be of more help, but hoping together we can find something that works for your long-term storage needs. ~CMM

Hi Maria 😊. Depends on freezer space availability…lol Individual bags can be placed in the freezer. Filled Ziplock bags can be, as well. I just make sure that after those few days of freezing to kill off any little critters, I allow the bags to return to room temperature and ensure there’s no risk of residual moisture on or in the ziploc bags before storing in my 5-gallon buckets 😊

The bucket does not need to be air tight. But you certainly want to make sure it is secure enough to keep out rodents/bugs. And make sure it is stored somewhere where humidity isn't going to be a factor. Hope this helps :)

Thanks for the information. I live in Las Vegas and I do not have a basement. I will be storing my flour in a bun under the stairs. Sometimes I turn off the air conditioning at night. The temperature goes up to the high 70’s is that too hot for the flour? Did you also say after taking the bags out of the freezer and let them acclimate for a day or two do you have to use a different plastic bag…then the one that was in the freezer? I understand to remove them from the plastic bag that was in the freezer. Can the plastic bag be reused. Also, what kind of leaf needs to go into the bucket? Thanks. 😊🙏

Hi Martha :) Properly stored flour will last 20-30 years in food grade buckets if kept at the proper temperatures. All long term containers for flour should be stored at between 40 and 70 degrees for optimal shelf life and nutrition. Sure! Here’s what I found via a search … “For longer storage, or in a warmer climate, stash the flour in the freezer, where it can last for up to two years. The cold does not noticeably affect the texture. Just be sure to let the flour come to room temperature before you use it for best results, especially when baking.” Hope this helps …happy baking! 🥰

Thank you I had the same question. I think I got a bad batch of flour somewhere it got 2 bags of flour, two bags of rice, all the pasta and 5 boxes of tea, and the cereal all stored in the same cabinet so I am learning to store rice and pasta in glass jars straight from the store and if I can I’ll start storing flour in the freezer. I told my husband I would like to buy a deep freezer to store food away from bugs but he doesn’t think we need one. I’ll show him your video 😊

Hi mrsdeltadawn …nope, no oxygen absorbers. The 5 gallon buckets are not airtight, so that would be a waste, imho. I just put my bundles in baggies and pack that bucket, secure my lid, and store. I’ve not experienced any problems :)

Yes! You can go ahead and store your all-purpose flour in the freezer. Just use an airtight container so the flour doesn’t absorb any odors, and don’t forget to bring the flour to room temperature before using. It’s important to note that if you remove on a particularly humid day, your storage bag/container may “sweat” as someone mentioned in an earlier comment. Don’t panic if it does, it will be okay to use. Just don’t let it stay in a damp environment after it comes to room temperature 😊

@Max Raabe mylar bag is a sort of strong plastic and aluminum foil type of material. Seals better than a heavy plastic bag. Stronger and keeps smells from contaminating the product inside. Air tight when heat sealed. That's my take on them anyway, good luck, maybe someone will add to or correct me if I'm wrong.

Last year I baked with 12 year old flour and it made fantastic french bread, I couldn't detect any staleness or anything like that. Kept it wrapped in doubled up plastic shopping bags on the pantry shelf, no fancy storage here. It was frozen at -5° F. for a few days at purchase time to effectively kill any potential pantry moth larvae or other critters. (32° F. isn't cold enough)

Hello Kris ... thank you for all of the wonderful questions! ***In response to your first question: After I remove the bundles from the freezer, I usually let them acclimate to the room temperature for a day or so. This will ensure that there's no moisture. Any risk of insect/insect larvae has been eliminated after freezing, so go ahead and let your bundles sit for a day or two. It will be fine. ***Next, I do not put oxygen absorbers in the 5 gallon buckets. The buckets will not be 100% air tight, so the absorbers would be ineffective. Wen I place the 3cup bundles (that are in the paper bags) into the buckets, I place them in a large ziploc bag and those seem to protect everything just fine :) ***I have not stored any of my flour in Mylar bags, but I HAVE stored up to three bundles at a time in a FoodSaver bag and removed excess air, and then place them in buckets to keep them safe from any possible rodent issues. If you have larger Mylar bags, you could add your bundles to them and seal appropriately and then choose to use an oxygen absorber at that time. I have found, however, that my foods placed in the Mylar bags/FoodSaver bags are a bit more difficult to store in the 5 gallon buckets; they aren't as flexible ;) . For larger quantities, I store in Mylar bags and 5 gallon buckets. For pulses, (beans, legumes, etc) I store much the same way; airtight jars and Mylar bags, and store in 5 gallon buckets. You don't need to freeze the flour. You are also risking moisture by it being in the freezer. Moisture = mold. If you are worried about bugs, just use oxygen absorbers with mylar bag. Bugs cannot survive in an oxygen free environment.

I buy 5 pound bags and vacuum seal them in 11 inch bags tight as a drum. Critters cannot live in a zero oxygen atmosphere. They store very easy as well.

Hello, Denise. To be quite honest with you, I have not had any experience with gluten-free flour. However, I did a little sleuthing, and this is what I found: "We recommend 2 years at room temperature, but we've used our products out of our stock storage for up to 4.5 years" I would recommend storing a modest amount of bundles and checking on them in 3 or 6 month increments to see how they fare. I would be interested to see how this works for you. Please follow up and let us know 😀

And, of course, there are those who say you don't need to freeze at all, but it's a step I like to include before storing away. I've cut back on bread, as well, due to some recent health issues, but happy to report that these bundles are still holding up quite well, and I rotate first in first out when I bake. I'll be 100% honest with you, Shermaine. Thus far, I have put up whatever white rice we've been able to get our hands on these past 2 years. We are very rural and our little stores aren't always stocked well. We have managed to pick up some jasmine and basamati from the small Amish Market, and we grabbed some when we went into one of the larger towns several months ago. Sometimes, we just get what we can get. I do not have brown or long grain rice(s) put up for long term storage, as they can become rancid at a quicker rate than the white rice. And, to make things even more interesting, I've been diagnosed with type 2 diabetes recently, and rice will be a big no-no for me, so im not sure how much more we will be storing. However, just for sake of transparency, I will share that some of my rice is in 1/2 gallon mason jars that have been vacuum sealed, and I do have some in mylar bags, placed in 5 gallon food-grade buckets with gamma lids, and threw a handful of bay leaves into the bucket for good measure, just in case. 25 lbs of King Arthurs flour is 18.00 and cheap bleached flour is 15.00 Eat what you buy and buy what you eat. Just a waste of time putting crap away. But a good idea on the prepping.

We’ve made plenty of beautiful loaves of artisan bread to enjoy with our meals since then, my favorite being when I add a beautiful multi-grain; so all is not lost. T

Why couldn't you add other dry ingredients in your flour for storage for bread?

Good question! Welcome to the farm, Paulette! Now, I don't want to speak for other ingredients some may use in their bread recipes, but it is important to note that different ingredients will most likely have differing time periods of efficacy. For instance, while salt and sugar would be just fine, in my honest opinion, other ingredients, such as yeast, baking powder, etc., may be quick to spoil or be otherwise useless in a long term situation. For me, personally, the bread I make for my family only has three ingredients, plus water; flour, salt, and yeast. *I do like to sprinkle my loaf in a hearty 7-grain cereal blend before baking, but that I store in a sealed mason jar. My salt I have stored in mason jars, and the yeast is in the freezer. And, although I am storing these primarily for loaves of bread, one never knows when they may be needed for biscuits or pancakes, so I'd like to keep it pretty simple. However, I'm sure there are those out there who have been successful in storing away blended ingredients with great success! I just haven't done so myself. :) I hope this helped, and we'd love to see ya back at the farm for future videos :)

Hi Spicy 😀 I love 5 lb bags, they're definitely much easier to handle. However, at the time I made this video, our store shelves were bare and hubby was able to get this larger bulk buy for our long term pantry storage. This is something we may be facing again in the near future... I like the 3 cup bundles as they are perfect for my bread recipe, AND they're going to be the perfect sized bundles for bartering should that become necessary in the future. It certainly can…it’s kind of a traumatic memory from my childhood…. We were very poor, and my mother would sift the bugs out of the flour. I’m sorry you’ve experienced this.

I chose to measure for my bundles as this is what I use for my bread loaves, and the recipe is flexible enough that the flour doesn’t need to be weighed or be accurate; it’s a very rustic loaf. However, Others can certainly bundle as best suits their needs and then weigh or measure after. Thanks for watching.

Horrible advice, freezer the flour after you store it in plastic zip lock bags is bound to trap moisture! I had that happen with a bag of basmati rice!

Hi Cher Ann…. Great point….at time stamp 5:22 I do state that after 3 days in the freezer, I take them out, allow them to acclimate, and THEN return them to the larger plastic bag to place in the 5 gallon buckets 😊. I have plans to re-shoot this particular video and I’ll be sure to emphasize that point a little more clearly 😊. Thanks for watching

Shoot. I just bought a 50 pound bag of flour for pretty cheap and I put it in a big container. My boyfriend kept talking about bugs and that it needed to be put in the freezer for 7 days to kill of an larvae. Thankfully I have a big enough chest freezer I picked up on sale several years ago so I suppose I’ll lug it upstairs and throw it in that for awhile

Just be sure to let it acclimate to room temperature after you freeze it before securing it in your containers for long term storage 😊

@@countrymamamusings7701 I was just gonna leave it in the tub and freeze it as is then take it out after a week or so and leave it in the same tub for long term storage. Is that ok to do?

If it were me, I’d go ahead and freeze it in the tub, if that’s what you want to do, but then upon removing it from the freezer, I would take off the lid and let that flour acclimate to room temperature and ensure there’s no moisture…the plastic tub is liable to sweat when you remove it from the freezer… it could create a mold problem
