No way!!! After moving back to England from Thailand 4 years ago, I had basically resigned myself to the fact that I will never have these wings again until I go back to Thailand. Now I don't have to wait. Thank you so much! They are not the best wings in Thailand, they are simply the best wings. Keep doing what you do Pai, it's amazing for people like me who know what authentic Thai food tastes like but just can't get it in our own countries. I know this might not be classed as "authentic" but oh my Buddha does it make me think of Thailand. By the way, have you ever done a Hokkien Mee or Bai La recipe? I lived in Thailand for a short period of time 10 years ago and there was a KFC 2 minutes away from me. I was so addicted to these wings I had to physically slap myself out of it. At that time they came out with the new wing bucket and my obsession got even worse lol I tell everyone I know how good KFC is in Thailand. Been meaning to recreate this recipe so thank you so much. I tried this recipe and it tastes EXACTLY like our wing zap KFC in Thailand. I live in london and couldnt find lime powder. So we used Tajin instead cause it contains dehydrated lime. It work perfectly fine! Thanks Pailin

I loved this! Tasted closely like wing zabb at home! I just came back from Thailand after not seeing my family almost in 7 years. I'm autistic and often struggle to eat and remember my aunts and uncles would always buy/find a KFC near by for me when if I'm having a difficult day. I was in Thailand in August and saw many KFC restaurants but didn't go in. I just happen to buy a bag of Yummy brand chicken wing powder from Mako and I'm so glad I did. It was a spontaneous buy but the seasoning powder was so good. So glad I bought it. Now I'll never run out because Pai shared it.

The seasoning of the coating is the typical limited edition of KFC menu here in Malaysia. It has sweet, sour, salty, tangy, and a bit of crunch from the toasted rice. 😊

This recipe sounds great! Can't wait to try it. Also, I live the Athletic Brewing beers. I found them a year or so ago. Live Upside Dawn, but the Cervesa Athletica is my favorite. They have great one ones that are online only, but my local Walmarts carry 2 or 3 varieties like Upside Dawn.

I love Zab wings at KFC, but they are a bit too spicy for me. I limit myself to just three. Having a recipe is nice so I could adjust the heat. I love the sour flavor, I think regular citric acid powder would work as a replacement for lime powder in case people cannot find it.

Congratulations on a truly enjoyable channel Pailin. Your advice is always effective. However, if I may be so bold as to suggest: Mixing your dry ingredients and Chicken in a plastic bag. Shake, shake, pat, pat, and you won't feel as though your Airway's Mucosa has been stripped away. It is also possible to achieve a Deep-Fried effect with an Air Frier. I like to soak the chicken in Butter Milk for 4+ hours; Coat the chicken in Dry Mix with Panko Crumbs; Spray on Canola Oil and cook for about 15 mins at 190C. Hey presto. And it actually looks nice. Anyhow, keep up your good work. It's much appreciated.

This looks like Thailand's answer to Nashville hot chicken (which can be tossed with the spices dry, or wet, which uses some of the cooking oil mixed with the spices to coat the chicken).

I have just read in the website recipe that the breading uses fish sauce as listed in your ingredients. However I could not see it used in the method. Is it used at all? Could you please clarify, Pailin? It's such a beautiful recipe and I would like to make it just the way you had.

I find double frying works for me. 1st fry in 2 batches to cook the wings. You can literally crowd the pan with both batches after letting it sit for no more than 10 mins in the second fry and then toss in the seasonings. Then serve.

Yeah, I too find it best to double fry. First time I made this I crowded the fry and the wings stuck a lot. And I used a smallish cast iron pot indoor. But lately I've ignored the winter and used my outdoor wok for frying these, so much better. Even if I must dress in winter boots and use mittens to not freeze my fingers off :D

KFC in india is so amazing too. Their wings and popcorn are not very spicy but they are coated in an extremely umami seasoning and they have really really spicy grilled legs and thighs. They also have seasoned rice which is shockingly good

Although your recipe is the true star of this video, I have to say I’m a True Lime fan too! I’ve been using it for years because access to *good* fresh limes is limited where I live. I love it in water (much more appealing than plain water 🤓) and pho. It’s way better than the bottled citrus liquids, and they also make lemon, orange, and grapefruit versions (in addition to fruity blends). Not affiliated 😂 just a fan of them and YOU!!

She generally suggests not using dried or powdered ingredients like this if you can help it, as they lose their flavour and aroma over time - but if you have to, (and sometimes there is no other option), then you'll have to experiment with the amount as each batch will be different. My wife and I just got back from Thailand. We went to a KFC in Bangkok (Silom area) and the chicken was incredible! Very different from the US. Very spicy. We later went to a KFC in Chiang Rai (Central Plaza) expecting the same experience, but the chicken there was just like KFCs in the US.

We were on holiday in Kuala Lumpur a few years ago. One evening after a few beers, we were walking home and felt hungry. The only place open was McDonalds. I never normally eat McDonalds, but needs must. I was extremely surprised to see them selling spicy coated chicken called Ayam Goreng. We live in the UK, McDonalds does not serve chicken here. The spicy chicken they served was some of the best chicken I have ever had, and I am a chicken nut. It was juicy, crispy and very spicy. If they sold that chicken here in the UK, they would put KFC out of business. Maybe you could look into Malaysian Ayam Goreng from McD's and try to create that. Thanks

This recipe sounds great! The one thing I'm surprised of is that the spice mix goes on the finished wings, somehow I expected it to go directly on the uncooked wings before the coating with the flour/cornstarch mix.

I can't get that lime powder so, lets say the only acid powder form I can get is Tajin. It would be a matter of balancing the amount of salt when adding the rest of the ingredients, but it could work, right? Or is it a lost cause for me?
