For anyone confused, this sandwich is a New York tri-state area staple. Everyone has their own custom order, but what doesn’t change is the Kaiser roll, the eggs, and the American cheese (though sometimes it’s white). You can order this exact sandwich in nearly any NYC bodega or breakfast food cart, and throughout the suburbs at delis. When I lived a few years away from New York, I expected the bagels to be way worse so there was no surprise there but what I didn’t expect is that I wouldn’t be able to find a Kaiser roll for a breakfast sandwich and it very much became the comfort food I missed the most.

Do the same thing, no ketchup, no mayo, but add a sausage patty or two depending on how thin it is. 1/3 inch is a good amount of sausage. Just make sure it isn't that much smaller than the bun - add mustard and it's awesome. We had a breakfast sandwich at the place i worked at when i was a kid. It had sausage, bacon, ham, eggs and cheese on a long bun. It needed something... i added mustard. I won't eat them without it now, it gives a little tangv to it. ❤
