So being Black I can say we eat A LOT of macaroni and cheese. I’m so excited to try this for a different flavor because I’ve gotten so bored and over it. This makes me excited about mac and cheese again. ♥️♥️♥️👍🏾

In defense of Ten Ways’ comment, mac-n-cheese is a traditional side item in Soul Food/Southern cuisine, generally served with.... pretty much everything. Black grandmas may actually get in fisticuffs over who makes the best version.... :)

Why do people insist the milk needs to be hot? I’ve made hundreds of béchamel sauces, and it’s always, hot roux, ice cold liquid, whisk vigorously. No lumps. Fun recipe though. Love the miso idea.

Marion has a weird relationship with miso. And I understand why. I always make my dishes have a different layer of flavor so that it’s not flat and one-dimensional. And miso does that with its funky, salty, umami and nutty notes.

This slightly reminds me of a creamy/cheesy miso potato leek soup I used to make back in the day. It was amazing back then and I imagine this is amazing now.

@@Marionskitchen It's been probably 20 years since I last made it. My kids didn't like leeks or something and I just stopped making it. I'm sure they'd kill for it these days. I may try to dig out the recipe since their tastes have changed massively since then.

I found that only 1 tablespoon of Shichimi Togarashi was enough for the bread crumb seasoning. Less is more!

I never heat my milk, just add a cup at at time and wisk well after every addition. Never had a lump problem.

Me too (never had a problem with cold milk) however if I have the time, infusing the milk with garlic, herbs, peppercorns, cloves, a teaspoon tip of honey etc is that magic to creating the most incredible bechamel ever....

Wow - great idea to bake the mac & cheese first w/out the topping and then add the topping. Will definitely try that, along w/ the lemon zest in the breadcrumbs. Also glad you suggested no salt prior to the topping - i found some of your other fusion pasta dishes tasty but too salty for my taste, so will definitely try them this way.

This looks AMAZING. I will never forget to warm the milk first again! That explains the little gritty lumps in my bechamel. I always feel like I prefer the macaroni and cheese BEFORE baking it. Probably because I grew up eating blue box macaroni and cheese. (:

I have been baking béchamel forever now and I have tried it every which way. There is no difference between using warm or cold milk. Most chefs will tell you to use warm milk bc that’s what they were taught im cooking schools. But that is just not factual. Sorry. You have to whisk either way. If you add the milk in stages and constantly whisk, you will never get lumps, even if the mil.k is cold. I always use cold milk if I am doing smth fast and simple. I warm the milk to infuse flavors into it, yes, but if that’s not what you’re after, cold is perfectly fine.

I just made this recipe and it turned out sooo good even though I only had cheddar cheese on hand!! The miso is amazing. Would definitely make again with different cheeses ❤

Looks extremely delicious, but I still like extra sharp white cheddar cheese in lieu of the Swiss Cheese that I find tasteless except in cheese fondue. Are you using mixed miso or white miso? Please advise.

The roux is done and you can take it of the heat and it should be hot enough to melt the cheese with no problems

Love all these ingredients, miso is truly the MVP forever! But those breadcrumbs need to be coated in melted butter or sprayed with oil so they get golden brown in the oven - even better if you can toast them in a pan briefly first

Love Macaroni Cheese (I'm a Brit) ... The idea with Miso sounds great, I also add some Onion, Garlic and Bacon! I prefer a Cheese topping rather than Panko etc. but that's just me! Will be trying this over the weekend as I've just bought a Platter with 5 different Cheeses!

Thank you so much for sharing this recipe with us. I made this for Christmas and it was delicious. The miso added the right amount of saltiness and umami flavor. The cheese selection was good, as well. The panko crumbs gave it a good crunch. I'll be making this again.

Marion, one tip I discovered by coincidence is that you can easily make any cheese super stretchy but adding a bit of mayonnaise. I discovered this by putting mayonnaise and plastic wrap slice cheese on my toasted sandwich only to find when I pulled the two halves apart, the cheese stretches forever and its was caused by the mayonnaise. btw, really great recipe but I don't know why anyone bakes Macaroni and cheese, it just dries the surface out, I love it nice and gooey and soft and Yum, however, is it done for a textural difference? (ignoring your added seasoning to the crumb as that's not usual)

tried this last night, came back on here so I could make a comment... Holy moly adding miso to mac and cheese is revolutionary! Its like adding 10x more cheese and 10x more salt but without adding it at all. It gives you the exact hit you look for when eating mac and cheese
