Cattle drives are not just an American thing, it also happened in Australia and it was a common practice up until the 1970s (road trains became more common to move livestock in Australia). You are right to say that the cook is the one who keeps the cattle drives going. In Australia we still have very large cattle ranches (stations) and sheep stations along with large shearing sheds and it is always the cook who is the one who keeps everyone happy with a good meal three times a day (four times a day with shearers). If you have ever been on a cattle or sheep station, you do get a bit sick of beef or mutton three times a day and it is always appreciated when a cook goes that extra mile to make the meals a bit different, now and again.

I saw only one, maybe two bowlers on men's heads at 18:26. They appeared to be northern cowboys by their different clothing and camp setup from the previous photos of Texas and Oklahoma cowboys. I wish the creators of the "cowboys wore bowlers" videos would watch this one.

I don't know about female cooks on cattle drives in the 19th century BUT I wanted to mention my grandfather Eaker worked on ranches around Menard and Mason Texas in the 1930s and 40s. My grandmother, mother and aunts and an uncle were on these ranches as well. I think my grandmother did some cooking for the cowboys.
