Not in the ufc per se, but Urial Hall's ko of Adam Cella is beyond scary and probably deserves a mention even though it happened in TUF (which is kinda in the ufc)

the sound of his heel connecting with Adams chin, his head slamming on the canvas and Uriah's celebration going from hell yeah to "I might just have killed a man". Like, when a knockout is so scary that the winner just stands in disbelief afterwards and all he can say is "im sorry" to the competitor, then you're dealing with a serious, life-threatening ko.
