Hi guys!! My local dollar tree has 1 pound bags of a variety of beans such as lentils, black, white, pinto, red, yellow split peas, etc and I just stock up on all those, get the onion garlic from fresh produce and cook up a batch for the week with whatever bean I’m in the mood for and separately cook jasmine rice and a huge salad and eat that for dinner 5 nights a week. So good, but it’s only good if you season your beans and legumes really well, add spices, garlic, onion, tomatoes. Be sure to soak them overnight too.

I followed a snowball strategy similar to what Dave preaches to get out of debt. There was a lot of sacrifice during that time including the grocery haul (or lack thereof) each week. I ate a lot of rice and canned/frozen veggies back then, allowing a weekly cheat, here and there. It's not for everyone but it can work if you're disciplined and willing to sacrifice.

You have a lot of good filling recipes. Keep up the good work. Listed below are a few options you may like. If you marinade the beans in the pesto sauce for about an hour before the meal it may make them taste better. If you have any leftover sauce and beans you could make a hummus type dip. The pesto could be a good substitute for butter for beans served warm. The only thing I would do different is I'd start with the meat selections first. On a twenty dollar budget you could buy a pound of ground turkey or chicken, the Sunkist pouch or can of tuna in olive oil with sun-dried tomatoes, a pouch or small can of salmon and finally a lemon pepper chicken pouch or can. That's seven servings of meat that could possibly be reportion into maybe nine or ten meals when combined with the beans and rice. Your choice of Ronzoni veggie type pasta is a good choice for extra veggies. You could make a cold pasta salad using just the red pasta from the box and toss in the seasoned tuna pouch. You may have to ad a little extra olive oil to coat the pasta. You could also take maybe three pieces of the spinach chop very finely including the stems for color and taste in the pasta salad served cold or warm. You could make a modified 15 bean soup or stew using a portion from each bean bag. I disected a 15 bean soup bag one time to see how much of each bean was in the soup. The smaller beans equaled about two tablespoons each. The bigger beans were 1/3 cup each.

One way to change up the sliced hotdogs with limas dish would be to mix some brown sugar and ketchup and use as a sauce. Kind of like calico beans? It wouldn't necessarily be quite as healthy but would change up the flavor if eating it several times in one week.

I was thinking if you'd bought an extra bag of spinach and left out the pesto you could have made your own pesto at home, as you had most of the ingredients required to do so. You possibly would have liked your own version more than the store bought one, and you could have used some of the lima beans in place of tahini, or even peanut butter if you had some in your cupboard at home, you only need a spoonful. Very easy to do and cheaper than splurging on a jar of pre-made. Some good ideas though and all meals would have been quite quick and easy to make. :)

Great video. I became vegan at least partially to save money. Rice and beans are cheap, and can make so many different things. Meat and dairy products cost way too much and I no longer have stomach issues. Plant milk in tetra pack is shelf stable and so much cheaper.

The beans and hotdogs look delicious. BBQ sauce would make a nice addition. 😋😋

I do like rice and beans but I think I'll pass on your $20 budget plan as I have no debt and never have but I do shop Kroger and other grocery stores I get most of my meat in the markdown area and I shop other markdown areas in other stores. Today at Kroger I got six packages of 90% ground beef each was almost 2pds so price varied between $1.81 - $1.93 a package. I usually pay between a $1 - $1.50 a pound your ideals are great for those trying to get out of debt. I know my next suggestion doesn't relate to food but I have bought all my clothing for years at resale, thrift stores or garage sales that is also a good saving tip

Every mix was balanced and tasty looking. Girl, you got to get yourself a squeeze bottle with a small tip to drizzle olive oil on your soup, instead of straight from the bottle. Save ya a lot of oil calories. Under $1.00 8n the cake decorating section of Walmart.. We put a smidge of grated romano cheese 9n our lentil soup❤️

I would have added dice potatoes in the soup. I am not a lover of mangoes I would have bought 3 bananas, cut them in 1/2 and slice them into the rice porridge (6 breakfast) The avocado I wold put on the side. The beans an hotdogs I would have made beanie weenies.

Good suggestions, Lynnea. Bananas are great for this kind of breakfast. XOXO
