I only eat cooked through salmon, My friend's dad got a parasite worm in his brain from undercooked salmon. it took a long time for them to diagnose him. Great video!!

After watching a few of your videos, I bought some nice salmon at the store and did the quick brine plus the medium heat cooking. It was the juiciest, flakiest salmon I have ever cooked! 🫶

Adam- Would orzo work in the salad instead of the bulgar? I like this meal; it's well-rounded nutritionally & looks wonderful. I'm not a salmon lover but I'm sure preparing the other fish I like with your instructions will make them taste so much better. Thank you, Adam. I love the taste of fried shallots, especially in a green bean & creamy mushroom casserole.

1000% Orzo is great. Cook the orzo, chill it down and sub it out.

There is a pretty cool way to cook a fish fillet evenly with the belly on (since it’s thinner). After the belly is cooked, you put a slice of potato under it to lift it from the heat. I learned it from Ludo Lefebvre.

I've never heard of that, good idea. I know some cooks also tuck the belly under itself to create an evenly thick filet, I prefer to remove it.

Also, to be fair, he did it with sole, where if you can’t really trim the thin part ‘cause it’ll look ugly. With salmon, I think trimming is best if you want a restaurant-quality dish.
