Actually, the '74 Matador that Rosco is driving is a former LAPD cruiser. These Matadors were the last LAPD cars to be ordered with manual steering, and the stuntmen hated them, even after a power steering conversion was done.

Back in the 70s they did use retired ambulances as hearses. That is real at least in rural areas.
