I love lemon curd!! Instead of throwing that pulp away, freeze it in ice cube trays and use the frozen blocks to freshen your garbage disposal!

Thank you SO MUCH! Iove making things from scratch because we can control with quality and characteristics of the ingredients, like organic sugar and our home grown meyer lemons. I love lemon curd!

I have my mum to thank for that. We grew up eating food made from scratch. Well, most of it. We had store bought treats too, but 80% of the time, it was food freshly made for us. I suppose we just carried on with it when we had our own families.

Chef this looks awesome but I wonder why you didn't cover it on the surface with cling wrap like we do with pastry cream?

It's enough that the cling wrap is securely placed on top of the bowl, to prevent air from getting in. That way, the curd doesn't form a skin. Hope this helps.

Worked very well but the pith made the curd very bitter. I would recommend that thick pith should be removed before chopping.

Meyer lemons don’t make it to the stores around here. But I’m sure the recipe will work with regular lemons.

It will, but other varieties will not be as sweet as Meyer lemons. You may need to remove a significant amount of rind with those varieties.

I suppose you can, but a food processor really yields the best result in this kind of recipe.

Meyer Lemons provide a sweet, citrusy taste with less acidity than regular lemons and no bitterness. They almost have a creamy flavor which makes it great for this recipe. Yes, you can make this with other fruits, from citrus to berries. Just replace the fruit and proceed with the recipe, www.biggerbolderbaking.com/whole-lemon-curd-meyer/ I can't recommend measurements since I have not tried the combination you mentioned. But I make a lemon cake where i have used store bought lemon curd & homemade whipped cream (minus the sugar & vanilla), & fold the curd into the whipped cream. I use that as the "frosting?". People who have eaten it, rave about it. Anyhoo, I like the summery taste the curd gives & I have never seen a lime curd or orange curd. I was hoping to make them myself & then make a corresponding cake to go w/the whipped topping/curd mix. I don't know if I should add the peels (minus the pith though) or which types would be best. I was thinking blood orange & maybe key limes.

For me, it doesn't. But scent and flavor would be subjective, so it really depends on how sensitive you are to the flavor and smell of eggs. Note that people tend to be more sensitive to flavors and scents they don't like. Hope this helps.

Yes, you can. I have a recipe for vegan lemon curd, www.biggerbolderbaking.com/vegan-lemon-curd-recipe/ Since my Vegan Lemon Curd is not thickened with eggs, you use a combination of cornstarch, coconut oil, and almond milk. All of these ingredients combine and react with the heat of the pan to make for a super thick and rich curd. You only need a small amount of cornstarch to create the perfect texture, just 3 tablespoons of cornstarch thicken a big batch and help to keep this recipe free of animal products.
