Hello Gemma! Exactly one year ago today, Valentine's Day of 2019, I was told by a bakery worker that French Macarons are EXTREMELY difficult to make and I would probably not be able to make them at home. Well guess what? I'm now making them at home. It took me 3 or 4 tries to get them perfect, but I'm now making them myself, at home! I'm a pretty experienced baker and I'm also self taught. I've been baking since I was 7 years old. I'm now 67 years old, so I've been baking for 60 years! How on earth did I get to be this old??? Anyway, I really enjoyed this video and I'm a new subscriber as of Today! You're never too old to learn something new.

Mary Ellen, I was a counselor with female juvenile delinquents for many years, and I would tell them to learn something new every day. I said, "The day you stop learning is the day you might as well curl up and start to die." Congratulations on learning how to make the macarons. I have wanted to as soon as I saw Beth from "Entertaining With Beth" make them, but fatigue keeps me from doing so many things I would enjoy. Maybe I will try these soon, they seem to move along fairly quickly.

@@ADayInLisasLife3947 they are not Macaroons. They are Macarons. HUGE difference! I'm thinking it's your phone's auto correct. Yes, do try making them. And KEEP trying because they are tricky!

I made chocolate macarons with raspberry cream cheese filling and a raspberry jam type center, shaped like hearts for Valentine's day. They were delicious and if you like store bought macarons, I highly suggest making them yourself because even if you fail, odds are you still end up with something delicious!

Can i just leave them to dry for 60 min to be safe over drying won't hurt, right?

It depends on where you are. You’ll know your macarons are ready to bake when you lightly press the surface and it’s dry and not sticky. After resting, they should look matte and not shiny like when you first piped them. It's not really just the time, it's when they develop the skin and are dry enough to be baked.

Hey Gemma, I’ve tried this recipe 10 times and I love it so much. I was wondering if you could make a flavoured macaron video. Also, what things would work in the shell and what would ruin the shell? As macarons are very delicate, I haven’t experimented with this recipe as of yet. Thank you

One day I was at a conference where people were talking about their study abroad experiences. Someone said they ate “macaroons” every day and felt so luxurious. I raised my hand and said, “Do you mean mAcARóNs?!” with a stupid, nasally accent (unironically, if you can believe it) and it was only after the room went silent that I realized I sounded like the biggest, most pretentious idiot on the planet. So now when someone says “macaroons,” I just figure out what they mean by context and don’t bother correcting them. No one likes a know-it-all!! 🤣

Hey guys, lovely video, but I have a question, whenever I add sugar to egg whites that way (without heating to a certain temperature), the mix tends to be grainy, does that matter?

Hi May. For this recipe, I had to be precise and placed egg whites at 50 grams as eggs vary in size.

This recipe relies on eggs, egg whites specifically. I'm afraid it cannot be substituted and hope to achieve something close to it. I have heard of some bakers experimenting with aquafaba but I have not tried it.

Sift dry ingredients.. almond flour, powdered sugar. Whip room temperature egg whites. Add little sugar in stages. Beat until stiff peaks are formed. Add food colouring. Sieve the dry ingredients again and gently fold it into the egg whites mix. Pour the mix into a piping bag. Line a baking tray with parchment paper (use double baking trays). Pipe the mix into circles onto the parchment paper. Bang the trays on the counter top to release air pockets. Set aside for 30-60 mins to let the shells get nice and dry. Once the top is dry, pop into oven 300 degrees F or 150 degrees celcius for roughly 15-20 mins.

Hi Gemma! I love the video, but I was wondering if I may be doing something wrong? I ended up with about the same consistency as in the video, but my macarons just wouldn't form a skin after resting, even after 1-11/2 hrs. Do you have any idea why this could happen? I have made them 3 times before. Could it have something to do with the humidity of the room or something, and how would I fix that?

Hi Diya. I think is the temperature. If it’s warm where you are, then you need to make this in an airconditioned room. It really helps. Check the written recipe here www.biggerbolderbaking.com/french-macarons-recipe-guide/ and follow the measurements as well as the step by step instructions. Hope this helps.

Hi Gemma, I very recently started baking and I love your channel. But this time Macarons was a complete disastrous for me. Not sure where I did mistake. They turn dark brownish from my Orange Color. They burst and spread over whole sheet and worst they stick to the sheet :( . Not sure where I went wrong. Anyways I will try again You are amazing ....

Wow, that's amazing! I've tried making macarons, and I can't get the macaron feet to appear! Plus my little sister loves macarons too! I'm gonna try again when she gets home for her college spring break.

Hi Gemma. I’m not good to make comments but I have to do this cause I been searching and making macaroons and honestly a been doing a great job, but what you did with your husband on this video is spectacular! Those feet are really great! Congratulations. I haven’t make any more cause I got high cholesterol and thyroid, most because of the baking, I ate almost everything cause is my husband and me only in the house, and I love to bake. Ok thank you so much for your website is very organized easy to navigate, for your videos in you tube and I bought the book wish is really good and enjoyable to read. I have made the French, Swiss and Italian versions of macrons. The French is the easiest to make but imo, the easiest to fail. The Italian version may be a bit more difficult, but can cut dry time down significantly thus less chance of fail.

May I suggest to some people if they find it a bit too sweet......then just use frozen almond powder and double cream for the middle / filling....so yummy when it cold in the middle not too sweet and match really nice with the macaroon 👍

Last time I made christmas cookies. They were dry as a desert. But I'll give this a try. Do I need steel or aluminum trays? And light or dark colored?

You guys look so cute together! I am gonna give your recipe a try this weak but before that, I just wanna ask, can I reduce the amount of sugar? I love macaron but I always feel that they are overly sweet. Can't wait to meet our "Baby Bolder Baker" ❤

I'm sorry but sugar is an essential ingredient when making macarons. I do not recommend changing the amount of sugar here as this recipe is very technical and needs to be followed to the letter.

Hi Gemma, I've tried this recipe today and my macarons have been resting for 5hrs now but they're still not dry. I know I chose the wrong day to try this again because it is rainy since morning 😔 do I leave them a little longer or are they just not going to dry and cook them anyway?
