I’m a retired professional Pastry Chef and l don’t make “Marshmallows”... I make “Nanny-Mallows”! That’s what my Grandkids call them. I’m making these puppies at least twice a month and every holiday in every flavor and color imaginable. Each Grandchild have their own favorite flavor. (I like Mint mallows cover in a dark chocolate.) I’ve even cut them into shapes and pipe them out into “Peeps”! My house is Marshmallow Center.

If I'm going to make a homemade dessert, it's been ice cream, more specifically, a poor woman's variation of Bluebell's Cookie Two Step. It's cookie dough ice cream and cookies n creme ice cream in one. My mom has a friend who caters but an event he was catering to was cancelled. He also had a friend who worked at McDonalds and supplied him with giant ziplock bags of crushed Oreos for this catering event, lol. Yes, they're the Oreos for McFlurries. So, with all these Oreos and no one to feed them to now that the event was cancelled, he gave them to my mom, who gave some to me. And I've been whipping up Oreo desserts for weeks! But it's getting hotter and my sibling/roommate really likes when I make ice cream and so that's the dessert I've stuck with. Sorry, very random ramble, lol. But maybe a summertime idea for anyone (though I have a Cuisinart ice cream maker and it wasn't too pricey on Amazon. I don't know how to make it without one).

This is my new addiction. I made vanilla ones, but put a split bean and the caviar in the sugar syrup, then added 1 tsp of Mexican vanilla. The other batch I put crushed up candy canes on top. Both are great in cocoa or just toasted. I have so many flavors lined up; I don't know where to start! Cotton candy, chocolate, coffee, toasted coconut, and on and on.

I just made some of these tonight (they are drying atm). I swapped a quarter cup of corn syrup with Torani Peppermint syrup (so one cup corn syrup, 1/4 cup Torani Peppermint syrup) and added a few drops of peppermint extract at the end, and they taste so good! I made them too! I used rose water and I must say, they are more like a pudding than a marshmallow. (for me at least) Also mine don't roast at all.

”they’re unbelievably easy, you have complete and total control” and than me not coating the container in powder evenly, adding to little gelatin, too much water and honey instead of corn syrup, than i don’t have a thermometer so i’m just guessing, and than it turnes out that my container is too small, oh and at the end i put them in the fridge wtf is wrong with me btw they turned out really well :)

For future reference, and for anyone who may also not have a thermometer, when making candy, you can test to see if the sugar is cooked enough by dropping a teeny bit into ice cold water and seeing what happens to it. For this recipe, the sugar should form a soft, flexible ball in the ice water. www.exploratorium.edu/cooking/candy/sugar-stages.html

I think I added too *much* gelatin. Or I fucked up the sugar syrup, though I had a thermometer and everything. Either way, it turned out way too thick and stiff, it's like chewing rubber. Was gonna make it for my friend for Christmas, but I guess I'm getting store-bougt after all o.o

I had no problem using a stand mixer and just added the syrup over about 2 minutes and let it cool as it was mixing for about 20 min. I also replaced the corn syrup with 1/3 cup of honey and added another 1/2 tsp of gelatin to get the desired texture as it was mixing

Tim Sauers pizzas are actually rlly easy to make tbh, i use tasty’s pizza dough recipe (which is rlly good) n just customize them. probably one of the easiest things to make from scratch

@stantwice I never liked marshmallows either. In my early 30’s I realized I react badly to corn syrup. So I made them with honey. AMAZING! Now I love marshmallows (as long as there is no corn syrup)

1:54 honey also works. I recommend pale color honeys like March honey, canola honey or dandelion honey. I heard fake honey also works. If you used dark color honey your marshmallows will be pale orange rather than white. 2:17 you can also have a glass of ice cold water and drop a bit of syrup to it until it forms hard ball. I do this and it works. I actually just ate some, and the others are on the plate in my kitchen. Doing them costed almost nothing. Buying them would cost a lot.

Yes, those are so unbelievably easy to make just having to mix so many ingredients together at so many different times and in very particular ways, while doing precision cooking, spending about an hour or more on actually making them and almost a full days worth of time….So much better than a quick trip to the store and a buck or two.
