Corn syrup is not available where I live, so I replaced it with a 50/50 mix of sugar and water, or actually 1/4 cup sugar and 1/4 cup water, just boiled the sugar solution a bit longer. The marshmallow came out simply fabulous, never had it better in my life. Thank you, Claire, for the recipe!

From someone who's made marshmallows more than an amateur probably should, some tips: - you will need read a lower temp on a candy thermometer than an instaread thermometer (learned this the hard way: Claire uses 245 F, while the candy thermometer I use would need 225 F) - make sure you use the right amount of gelatin (scrape it *all* out of the container you're using to hold the melted stuff) - hot chocolate/cocoa isn't the only drink you can have with marshmallows (my personal favorite is homemade eggnog and orange-nutmeg marshmallows) - toppings after putting it in the pan are better than mix-ins because they won't defluff the marshmallow - layering is possible but hard and you need to get the texture right on both (or more) layers for it to work And then some personal favorite flavor combos: lemon-rosemary (using rosemary simple syrup), orange-nutmeg-almond, lemon meringue pie (1/2 lemon, 1/2 vanilla, crumbled graham crackers in between), and of course vanilla (but using vanilla paste instead of extract so that you can taste it more clearly and it leaves those signature little black specks).

@@tatertot5673 I usually put hot choco powder (cause Im lazy and think some brands taste pretty good) put the bag in, add 3/4 boiling water 1/4 coffee cream and by the time I stop mixing the bag has already given plenty enough raspberry flavour and voila. Super simple, cheap and fast.

Everything I have made from Dessert Person has turned out amazing except for the pomegranate and cranberry mousse pie - my whipped cream went kinda buttery and then I mixed it too much to get rid of the lumps so it lost a lot of air and it didn’t set. Was really disappointing but the silver lining was that I’m starting to understand why things go wrong and my baking generally has never been better - so thank you Claire! Would be great to see how you tackle some of these more risky recipes, or the ones were things can go wrong with one small hiccup. Adore the book and can’t wait for the next one (when?)!

Tried this for the first time today and they turned out soooo good. I used a 2:1 ratio of sugar to water because it's hard to find corn syrup where I live. Then I piped them into hearts for valentines day! They were way easier than I expected and I'll definitely be making these again.

Every time I make this its so satisfying! Such a great recipe! Except the oil lining the pan anything, but that! Mine kept liquifying as oil ate away at them after I wrapped them no matter how many times I coated them in the sugar and starch. This time I skipped that and piped them onto a tray with a spiced cocoa and powdered sugar mix and they look great.

I'd you didn't catch it, or it wasn't explained in detail, Whip the egg whites until it's semi-stiff peaks. Only then can you add in your sugar/syrup. Your egg whites will refuse to cooperate. Anyways, best of luck!

Hi Claire, i have a tip you may find helpful with your chicken yard! Put down an 8” layer of wood chips and feed them your veggies scraps. They constantly scratching and pooping and mixing it all up and creating a great layer of compost! It’s a lot easier than using a bin. I hope you see this and that it helps!

I tried this with Trader Joes liquid egg whites (since I wasn't sure whether I'd use the yolks and didn't want to waste them), and boy was that a terrible idea. Didn't work at all and when adding the hot sugar mixture it completely liquified. Real egg whites worked perfectly on the first try.

Claire i just wanted to thank you for all your hard work over at BA and on this channel. I LOVE LOVE LOVE the krispy kreme donuts you made. Ok so i have messed with these doughnut for 2 yrs now, and ill say again they are NOT krispy kreme but i dont think anyone is going to make KK without all the dough conditioners/stabilizers that they use and an extruder. That being said, ive made these and tinkered with them at least 3 dozen times. They are AMAZING homemade doughnuts. The biggest thing ive found to improve them is use a bread mixer yeast. It comes with stabilizers, the other using 10oz of bread flour and 20oz Ap flour, so two 3rds ap and one 3rd bread. Ive tried a dozen different ratios and flours and i think the ratio i now use has come out the best. I also believe the baking powder does help for taste and texture. No they dont look as much like KK with the BP, but the texture is much lighter/airyer and overall more enjoyable to everyone whos tried mine. And with those changes everyone whos had them(about 100 people with friends/fam and coworkers) says they are they best donuts theyve ever eaten besides KK. Better than voodoo, better than any artisans donuts, better than DD. I am very proud of this recipe and make them at least once a month, more often than not every 2 weeks. SO THANK YOU SO VERY MUCH CLAIR for all your hard work on them!

There is a lovely pâtisserie in a neighboring village that makes the yummiest marshmallows. I got some for Christmas-vanilla ones and raspberry ones. I have a friend coming back to France in March and I will ask her to bring me some corn syrup. Her husband loves hot chocolate and I’d like to make these for them!

I’m excited to try this recipe! 💜 #claireifiedquestion when you said to mix in corn starch with the powdered sugar. Like how much? A pinch into however much you use? Or like a quarter of whatever amount of powdered sugar you use?

I love the irony of her making a big deal about using as little milkfat as possible and just a spoonful of Agave, and the Cafe Du Monde sweatshirt...where they use 1/2&1/2 and cane sugar.

I've found a cool hack for those unfortunate to not have a mixer. You can beat your egg whites to stiff peaks with a whisk if you put it in between your palms and quickly rub them 😁 I was so happy to find this out! Hopefully it helps someone! Merry Christmas everyone!
