Excellent. I have been using this method for years and never seen it on a video anywhere. Somehow I got to it from a combination of what Ina Garten showed one time and what I just ended up doing. People, she's got it right, if you want tempered chocolate, give it a try. (The only thing I do differently is use the microwave for the first step, small spurts, and I use Ghirardelli chips.)

So glad this video was helpful! If the chocolate is tempered correctly it shouldn’t be an issue during the summer, it might only take a few more minutes to set. It’s important not to out it in the fridge because it will “ruin” the tempering ☺️☺️

Thank you for subscribing! If you’re using “real” chocolate do not refrigerate unless what you are doing is going to be used right away and should stay in the fridge. But for example if you’re making hot coco bombs they should stay at room temperature or breakable hearts or bear or stuff like that. Now this is different with candy melts, they usually have no issue sitting in the fridge.

Hi there! I don’t know if I can answer your question, but for me it’s when the chocolate is 75% melted. This is why I don’t let it melt all the way through and remove it from the heat before. Also for the microwave method, I try to stick to 20 seconds intervals to avoid burning it. Adding unmelted chocolate to the melted one will also cool it down which will allow the tempering process. I hope I was able to answer your question 😊

You can use any type of couverture chocolate with this method, if you hate tempering I would suggest using candy melts since they don't require tempering and Stover's sweet shoppe have some good ones!

Great tip and method! Few questions: can we do a test piece before piping the entire batch (like a thin piece), do we cool/wait before transferring to piping bag and do we have to use it all at once? Thanks!!!

Hi! When it comes to tempered chocolate you need to work fast. You can absolutely do a test piece before piping the entire batch, but no do not wait for the chocolate to cool before transferring to piping bag because once it’s cooled it will set so it will be impossible to pipe 🥰

Hi Tameeca! Sorry for the late reply, when chocolate is tempered properly it will not melt at room temperature so yes you can wrap it as pastry favours!

I plan to make snickers and I wanted to dip them in the tempered chocolate , do I have to dip the snickers right away after I melt the chocolate? Do I leave them out in room temperature for the chocolate to set? Or do I have to refrigerate or freeze for it to set on the candy bar?

Hello! Yes you need to dip them when your chocolate is melted because tempered chocolate will set fast and if it sets then you need to temper it again! You can leave them at room temperature and should usually take around 20 minutes to fully set :)

@@ButtercutBakery I made a mess! Lol i could not coat the bars properly, the bars were falling apart inside the chocolate because the chocolate was too think. I think when it comes to coating bars the chocolate has to be liquidy not thick.

Any chocolate would melt in a hot weather, you can place it in an airtight container away from humidity. If it’s way too hot it would be better to place it in the fridge but make sure you place some paper towels to prevent any humidity coming from the fridge ☺️

Tempered chocolate would not melt at room temperature. If you are using a chocolate bar to make some kind of chocolate favours, make sure to cut it in small piece and follow the same steps as in the video. I hope I answered your question!

I just tried this. It came out good ( I think). It set in about 15mins. But when I break it doesn't make the crack sound. It's glossy too
