LOL!! For 30yrs, every time we'd go to the breakroom at work, someone would purposely ask me what I was getting out of the sandwich machine, cause they always knew I was gonna say, "A Dirty Diablo sammich". I always added the word "Dirty" cause it came out of those machines. 🤣

That was filmed in an Old Hickory House. The Diablo Sandwich would have been shredded hickory smoked pork in a hot BBQ sauce. There is only one Hickory House left in Tucker, Georgia. You can get the Diablo Sandwich there. “Do they got any hush puppies, daddy? Junior 😊

Also, after watching this, this is a recipe not like the old house. Plain pork sammich, spicy sauce, pulled pork, old school bun, and regular jalps was an option. Zero olive oil, just a good ole greasy pork sammich, and with sauce on or off and peppers were an Xtra. Plus I don't remember pepper jack cheese. And my old butt ate this in the 70s. As what year were the cars? And especially the trans am?? Last year of that engine and mine has only 42k miles on her. The last factory year of that bad a$$ big block. 😎. I also have the movies in beta , VHS, and discs. Sorry big guy , but this ain't the sammich. Olive oil and dehydrated Mexican peppers 😂😂😂. I'm sure it's good though! I'm that Ole man that seeks a good "truck stop burger" at the " Choke and Puke" 😁10-4!

I worked in Hollywood in the 80s and 90s worked with Arnold, Sly, Cage, Robert Downey Jr, Joe Pecci, Belushi just to name a few BUT I always wanted to work with Burt and never got the chance.

@@BuzzCooks I only saw him very briefly that one time. But I was very impressed that even though he was famous he seemed like he was very respectful and the fame didn't go to his head. And strangely enough I met someone on the bus in North Carolina a couple years ago that told me he had a friend that worked with him and they had a Corvette that needed some work on it and one day it went missing. Well Burt had towed it taken it to the shop and paid for all the work that needed to be done on it.

I grew up in Palm Beach County FL. Burt was a local icon. I was attending Palm Beach Junior College when Smokey and the Bandit hit the theaters. It would be difficult to over state the impact of the movie for the area. Burt and Sally were frequently seen around town. Everyone had a CB in their car/truck. So many great memories! I'll have to give this a try!

I’ve always had the Diablo as almost a sloppy Joe but a little more spicy and it had canned corn in it for sweetness. I don’t think they had all this in Alabama in the 70s🤷‍♂️. The one in the film looks like the one’s we always had 🤷‍♂️

Had an awesome BBQ sandwich years ago in East Texas somewhere south of Waco. I was 12 and my dad took the family to track down an old family grave site in an old cemetery with graves from around 1890s. The eatin' place looked like an old weathered wooden barn connected to a 50's style renovated gas station. The sandwich was shredded Pork, shredded brisket, and diced jalapeno kielbasa, they covered a toasted hoagie bun and topped it with two slices of pepperjack. the top roll had a brown mustard and two homemade pickle planks along with a bunch of hot jalapeno slices. They were wrapped in with wax paper and let the hot meat melt the cheese. Sweet tea and potato salad. I still think about that place 20 years later. I asked a friend about the place and he said it burned to the ground one evening after closing. We managed to find the cemetery and took pictures of the gravestones. We found sites where the Richardson's and Odell's were buried.

I am not sure if it is in the comments, and I am repeating but here is the deal about this. The restaurant featured in the movie was called the Old Hickory House. The Diablo sandwich appeared on the menu after the movie was released. Jackie Gleason was doing improv during that scene and made up the name of the sandwich on the fly. It didn’t exist before the movie. After the movie came out a plain pulled pork sandwich with a Tabasco based BBQ sauce was introduced. The recipe that was told by the crew guy could be true. The caterer for the film maybe only had beef to make the sandwich at the time. The recipe is not that special. There are many versions of the sauce from many places. This could be the kind of peppers the caterer had, so that is what was used at the time. In a Mexican restaurant they have what is called a "Torta" which is basically this sandwich.

well unless you worked on the film not sure how you would know ? I having worked on many many feature films back in the day have to go with what I was told from a former crew member who was actually on the set at the time. But Who really knows? It does make sense making a Birria Beef sandwich and calling it Diablo.

​​@@BuzzCooks Exactly. The person that talked to you could be exactly telling the truth. The story does not have any holes in it. People are confusing what the sandwich from the actual place was after the fact to what it was on set. It sure could have been beef on set. Then later they just changed their existing pulled pork sandwich to take advantage of the movie tie in. Maybe Gleason was not a fan of pulled pork. Maybe there were people on set that stayed kosher, so the caterer did not have pork. The comments are not fair towards you. There is no reason that crew guy or you are making this up. He could be remembering the type of peppers wrong. You could make it with almost any peppers, and people do use different peppers for the same sandwich. Both your story about the recipe and the recipe seem real to me. It is a good recipe no matter what people think about it.

I reconstitute dried chilis in boiling hot apple juice, let cool till room temperature and then blend them in the ninja. Makes a great base for BBQ sauce too.

You shouldn’t clamp the lid down on the crockpot. That’s a good way to have it shatter. The clamps are there for when you have it in transit, carrying it from one place to another. You don’t want tight. Again, it can crack the lid And ruin your gasket on the lid.

@@BuzzCooks DON'T clamp the lid shut while cooking! Although I have a different brand of slowcooker, I used to clamp the lid down every time I used it until one time it shattered. There was glass everywhere, and I had to throw an entire chicken in the trash. Even though most crock pots have a little hole in the top to allow for a temperature probe and for steam to escape, it's not enough and clamping the lid down turns the whole thing into a giant pressure cooked (for which it's not designed!) Learn from my mistake - ONLY clamp the lid down while transporting the food, not while cooking it!

Great recipe, always wondered about this sandwich. Also I wanted to say please do not lock down the crockpot while it's in use and cooking, it's only for transporting, and this comes from the makers of crock pot.

I`ve cooked roasts like that as steaks. I could probably eat a couple of them cooked over a pecan wood fire. I discovered that by putting a large aluminum wok domed lid over chicken or a piece of meat like this that I could use pecan and oak twigs and small kindling size strips of wood in a small fire on the edge of the dome way off to the side and the flames would go over the top of the meat in a circle like an air fryer but there was no fire below the meat. Chicken never burned and got crispy toasted quickly this way...even the pieces across from the fire on the other side of the lid. It was a very fast cooker that used very little wood. I used a metal grill from a large oven sitting on cinder blocks.

Well I am going by what a Crew Member who was there and worked on the movie told me way back in the 80s. Most likely Hickory House made the sandwich after filming. Script was written long before they shot at the Hickory house. Im sticking with the story as told to me.

Going to try this recipe once I get to the Farmers Market where I get my meats from. I picked up a cheap hand mixer from a thrift shop (paid like $2 for it) so I could use it to break my heats up in the slow cooker or pressure cooker just to save me a few dishes to wash.

This recipe looks great and definitely one from the the Hollywood craft food wagon with all the sourced western US ingredients in that dish. I definitely hope to find it in print, I'd love to try it thinking this is today's new Diablo. However, my thoughts are, given the look of the rural GA movie location choke & puke, it wouldn't be in a 70's small diner budget to source the spices, peppers for a specific item. I do think the commenters talking about the Old Hickory's version BBQ with mass market hot sauce of some sort would be so much more likely this far east back then. No way picking on any diner, times were WAY different back then with spices/sauces etc to buy. Also, then and today's restaurant kitchen is going to use items their other dishes use, to save costs for the bottom line or guests pricing, still creative/tasty, faster for their line staff to make aka another way to save budget :) .

Ohhh that looks nice. I could definetly get inspired from this. Only I'd make it with a nice mayo or something and caramelized onions and a mild cheese on a toasted burger bun. I mean. Yeah it wouldn't be an original but I bet it would taste great.

Regardless of what a "real" diablo sammitch is at Old Hickory House or anywhere else, if you watch the movie clip in better resolution it seems to be spicy fried chicken without cheese.

That scene was filmed at the Old Hickory House restaurant off of Old Dixie Highway in Forest Park Georgia. Been there many times in my youth they made great Brunswick Stew too. They had several locations around the greater Atlanta area but sadly, like many local family owned real BBQ restaurants, they closed about 15-20 years ago.
