Thanks for having contents like this which promotes the history of Filipino cuisine which are often overlooked. There are lots of Filipino dishes with indigenous and colonial origins. Most of us knows the dish but didn't exactly know its roots. Philippine cuisine has an amazing culinary evolution. This dish reminds me of relyeno dish and roasts stuffed with paella or aroz valenciana. We used to raise turkeys back then as guard birds, the black/purple feathered ones. I remember their eggs looks very unique, it has some beautiful dots on its shell. We used to cook it in gata or tiniim which is basically braised and simmered in pineapples along with ducks called itik. Biringhe I think is similar to biryani. I remember it being prepared in feasts in pampanga when i was a kid when we visit our relatives in our father's side.

Humba from "some" parts of Leyte and Samar... Humba is sometimes described as Visayan adobo. What makes humba from some parts of Leyte-Samar unique is the use of panutsa instead of brown sugar, and tablea which is absent in many other Visayan versions.

Nice video.. the pavo dish reminds me of my Lola's but she cooks itik or duck instead. May I also comment on the English translation, traditionally in Bulacan, we call our dads/fathers Amang or Tatay and moms/mother's Inang or Nanay. Grandparents were called ingkong and impo.

That looks absolutely delicious. It would be interesting to try an adaption in America. Our store-bought turkeys are much larger in girth, and finding the bamboo of the correct size might be difficult. We would have to use cow's milk as not too many carabao are used here. 😁😁 Otherwise I think it would be do-able.

You should visit our place here at Bonifacio Mis.Occ, we have a bibingka that reached all over the Philippines, its so delicious its like no other bingka you've tasted‼😌🥰💗. Its only made in a simple house and only a small group of people knows the recipe and its slowly fading because the original owner is sick and in bed rest, only a few of women cooks it because of its tedious process.

That is the natural size of turkeys supposedly. The ones in the US are from factory farms and are injected with hormones to make them big and fat
