Great video as always! Those are not Striped Bass, though! Those are White Bass X Striped Bass hybrids. You can tell by the lateral black lines that run through the body. On striped bass they are solid, having no imperfections, while on hybrids, the lines below the lateral line are usually broken, and such is the case with the fish you cooked. That being said, those fish are, for certain, considering they are hybrids, farm raised.

Yes those are hybrids but I've seen youtube videos of people catching them in the wild. Ace Videos has done a catch and cook with it.

They're spawned in farms and then released, they're almost entirely infertile but usually they're caught in the wild after they are released into the wild fisheries by the government so it's kinda both

As a chinese, I wouldn't steam garlic with the fish, but the green onion is the must. I will put the white of green onion, ginger, cooking wine and a little bit vinegar with fish in the steamer. Discard them after steaming for 10 minutes, add the soy sauce and steam for a few more minutes, heat the oil at the same time. When the oil is ready, put the green part of green onion on top and pour the oil. If you really like the garlic, add the diced garlic or garlic powder just before pouring the oil. Garlic is the best when it is with oil, but not in the steamer😂😂😂

Mark, the lines on your fish are broken. Striped bass are supposed to have continuous unbroken lines toward the tail. What you have here may be hybrid bass. Either way the meat is flaky and delicious and only fresh crappy equals stipers and hybrids.

You're right those probably are farm raised (hybrid striped bass). I would be surprised if there is somewhere that they can be legally harvested commercially, especially since they don't occur naturally and are all stocked by state fish and game organizations. They are one of the more common farm raised fish though. Keep up the good work!

What is better to do than cutting off the fins like he did is to slice down along each side of the fins and then pull it out. That takes all the bones that support the fin out and you are left with fish without fin bones.

I'll tell you what Mark, we were catching these guys this spring easily twice to 3 times the size of those schoolies and you are not kidding about those spines . It is however, a right of passage to be stabbed by one, you will bleed, a lot. And the wound if not treated right away with an antiseptic, it will become infected quickly.
