Insane that you and Erica drove from Kentucky to Austin... diving head first straight into all of this madness. I can feel the exhaustion through my screen. Even watching Chuds video, seems like you guys are doing the heavy lifting at every turn on getting this meat cooked. Nice work!

I love BBQ, smoking meat, TEXAS, drinking beer, and hanging out with friends. Bit, there is no way I would recommend any outdoor event in August, in Texas. Much respect pulling off this event and overcoming all the problems and making it happen no matter what. Make the next one in the fall or spring, even winter, it'll be much more enjoyable for everyone!

I just got into smoking brisket a few years ago. Been working on perfecting my technique. I actually only ever watched a couple of your episodes and worked on my own after that, but I want to give credit where credit is due. I enjoy your videos, your energy, and most importantly your love for good smoked brisket. Pay attention people and you will be making amazing smoked brisket in no time. Keep up the good work.

I've only been smoking brisket for about 2 years now and of all the pages, I love yours the most. I learn so much and I really appreciate your style of smoke, using your background and science to make your BBQ even better. Even though we don't do everything the same, you have helped me find my own style of smoking. I do have one question... I love dry brining my ribeye steaks (salting the meat about 24-48 hours before I grill). I have noticed even when I cook it well done (huge steak foul) for my mother in law, it is still very moist. I have adopted this technique on my brisket over the past 3-4 smokes but can't tell if it really makes a difference or if I'm wasting my time. I'm not experienced enough to know the difference yet. Have you ever tried this?

Right on. I've watched all the other videos from this event. Looks like an epic event for sure! I have a feeling there was probably a lot of unexpected issues in the planning vs. delivery of all things needed for this. But looks like you guys pulled off an incredible event. Congrats!

That was the same weekend my church had their annual BBQ. I think we did 1400 pounds of brisket this year but I know we have done as much as 1600.

SIMPLE ANSWER: cook the full spares as is, pat em dry, season and cook, leave on the flap meat, trim nothing. Old school BBQ

Longhorn beef is leaner than other breeds and is lower in saturated fats. Also higher in Vitamin A, CLAs and Omega 3 Fatty Acids, all crucial in reducing Cholesterol, Diabetes, Cancer, and High Blood Pressure
