Could I just toss all the ingredients in blender to mix? Will that compromise the quality in any way?

You could try a flax egg (1 tbsp flaxseed + 3 tbsp water) or just more pumpkin (1/4 cup extra) or mashed banana (1/4 cup) or yogurt (1/4 cup)
