The monster parsnip was sweet and delicious and not at all woody. I roasted one third of it and the remaining two-thirds was boiled and put into the freezer to make mash at a later date.

Thanks, very encouraging! Interestingly I entertained a friend yesterday who'd grown parsnips and let them overwinter in the ground. His comment was almost identical, very sweet, not at all woody and not compromised by insects

I remember pulling up a giant parsnip years ago when I was young with my Dad and stepmum. I think that was the catalyst for my love for gardening.

Wow! I have gotten some big ones in the past but that one is massive! No gardening here today - 5 degrees F out and loads of snow on the very frozen ground. I am so ready for Spring this year - worst winter we've had in a long time. Going to a flower show tomorrow which should really help my mood. Hope you are doing well Liz.

@@LizZorab I finally ate some parsnip this past week. I made some pastys and there were no turnips so I tried parsnip. I must say that in the right recipe they would be wonderful, but my Cornish Pastys is not one of those. The flavor was much stronger that I expected. Now I'm off to find parsnip recipes to try. My goodness! I swear that thing was fighting back at one stage! You could always try grating it, blanching it, and freezing it in portions. Then you can use it up in casseroles and stews. If it's woody I mean.

I enjoyed watching you taking up the parsnips. I have never enjoyed eating parsnips but then I have only gotten them from the grocery. I have heard so many people say that they enjoy them. Maybe one day I will try growing them. I am told that they are much better. How do you fix them?

There's a massive difference between shop bought and homegrown parsnips. I find shop bought ones very soapy and tasteless. I prefer them roasted (parboiled first) or will mash them.

Hi Benni, this one grew without any feed. Generally I try not to feed plants and to just improve the soil each year. I guess it was very happy with the hot summer and wet August that we had in 2018.

Hi Robin, I've recently written an article on my blog about growing parnsips. bytherfarm.com/how-to-grow-parsnips/ Depending on the weather conditions and your local climate I'd say early June, as long as your ground doesn't freeze early in the winter.

Hi David, fortunately it wasn't woody at all, in fact we were pleasantly surprised at how good it was. Very sweet, very tender - we were very happy bunnies!
