The monster parsnip was sweet and delicious and not at all woody. I roasted one third of it and the remaining two-thirds was boiled and put into the freezer to make mash at a later date.

Thanks, very encouraging! Interestingly I entertained a friend yesterday who'd grown parsnips and let them overwinter in the ground. His comment was almost identical, very sweet, not at all woody and not compromised by insects

I remember pulling up a giant parsnip years ago when I was young with my Dad and stepmum. I think that was the catalyst for my love for gardening.

Wow! I have gotten some big ones in the past but that one is massive! No gardening here today - 5 degrees F out and loads of snow on the very frozen ground. I am so ready for Spring this year - worst winter we've had in a long time. Going to a flower show tomorrow which should really help my mood. Hope you are doing well Liz.

That reminded me of my granddaughters favourite story... the enormous turnip. Was waiting for you to call Mr J, a dog, a cat, the chickens to pull and pull 😂

I walked past that parsnip daily for so long, every time thinking 'I'll get that one out soon', so I'm really pleased to have harvested it at last :-)

Oh that's a monster ,parsnips are my nemesis never managed to grow one yet. Currently doing my 3 showing of fresh seed lol fingers crossed .

@@LizZorab I finally ate some parsnip this past week. I made some pastys and there were no turnips so I tried parsnip. I must say that in the right recipe they would be wonderful, but my Cornish Pastys is not one of those. The flavor was much stronger that I expected. Now I'm off to find parsnip recipes to try. Thanks Liz.

My goodness! I swear that thing was fighting back at one stage! You could always try grating it, blanching it, and freezing it in portions. Then you can use it up in casseroles and stews. If it's woody I mean.

Hi Jay, it wasn't woody, it was lovely! I roasted about one third of it and boiled the rest to go into the freezer for mash at a later date :-)

It's not quite time to plant seeds yet, so perhaps by the time you are ready the soil will have warmed enough for them :-)

I think it's still a bit early for parsnips, I'll be waiting for another month for the soil to warm up. :-)

Hello! I was a little amazed at the size of this parsnip (you can probably tell by my laughter). I'm sure I wouldn't be able to grow one this large if I was actually trying to!

I enjoyed watching you taking up the parsnips. I have never enjoyed eating parsnips but then I have only gotten them from the grocery. I have heard so many people say that they enjoy them. Maybe one day I will try growing them. I am told that they are much better. How do you fix them?

There's a massive difference between shop bought and homegrown parsnips. I find shop bought ones very soapy and tasteless. I prefer them roasted (parboiled first) or will mash them.

Hi Benni, this one grew without any feed. Generally I try not to feed plants and to just improve the soil each year. I guess it was very happy with the hot summer and wet August that we had in 2018.

Hi Robin, I've recently written an article on my blog about growing parnsips. bytherfarm.com/how-to-grow-parsnips/ Depending on the weather conditions and your local climate I'd say early June, as long as your ground doesn't freeze early in the winter.

That parsnip Weighed more than 3 of my children. 2lbs 12 oz 3lbs 12oz and 3lbs 4oz 😂😂 not as much as my 9lb 8oz one though 😉

Hi David, fortunately it wasn't woody at all, in fact we were pleasantly surprised at how good it was. Very sweet, very tender - we were very happy bunnies!
