I like how he stated, you respected the pig. I wish activists would understand that. Yes mass farms suck. But look at even pork these days. The quality is so much better now, you can make a medium rare pork steak or chop without cooking it to all hell. chefs don't want that meat either. I don't want to eat that meat. I like where foods going.

Salty, sweet, sour, spicy. Balanced as only the Thai can do. The best and most creative food is bought from street vendors on any Soi. Love Bangkok I believe one of the best food capitals in the world. Some of my best meals were eaten on a plastic stool by a food cart in Thailand.

@garbygarb31 well according to Michelin info certainly award winning chefs do age duck and I think it's a way of preserving. The five spice is genuine and sealing the duck with boiling water helps in the process. Honestly I have enjoyed duck, usually Indian runners as a dish in S E Asia and it's often quite tough so the technique used on the programme would help increase flavour and that is the point.

A truthful food reviewer tbh... and he know's Thai food is Thai food. There is only so much the original recipes can do, and that is the double, yet beautiful edge to the sword. Thai food is unpretentious, and for the most part, the original recipes are made by and for poor people. Even the Royal cuisine is prepared by poor people as the class system is so strong here in Thailand. That's not to say it is not a special cuisine, but all of the food you saw at that table, a local grandma and aunt is making it somewhere in Thailand without the overpriced restaurant setting and professional equipment to better shoulder the traditional cooking gear. SORN is delicious, but in the end... it is Thai food, but it is the best version of Thai food. A certain place to note and visit, but not a daily take on whats to offer, nor a place that locals will frequent because hey... their mums massaman maybe taste subjectively better! Anyone saying else so, has not lived here, and is stuck in their western tourist mentality of the Kingdom.

the bangkok big cuisine food fair on ramkamhaeng road that opens in afternoon has lots of southern thai dishes as well as other regional cuisines, requires no reservation, has great food, smaller plates but an adult human sized portion and price wise is an inexpensive great value. interesting how they got 3 stars, could it be the french style presentation??

I had the great pleasure of eating at Sorn when it was a 2 Michelin Star restaurant. It is amazing. I was able to book a table fairly easily, I doubt that will be the case now with 3 Stars. But I have to say, I ate at another 1 Star restaurant and preferred the food there. It’s all down to preferences.
