If I were living far from town, wanted some breakfast cereal, and had corn meal in the cupboard, I'd actually give this a go. Just for the fun of it. Spend the afternoon puttering in the kitchen, put a bunch in a jar for later. Yeah, it's a good thing to know. I'd do the one that you spread real thin. They even sound like corn flakes when you poured them in the bowl. Thanks, Barry.

I think the original corn flakes were made with dry whole corn kernels that were first steamed soft and then squished flat into the flakes. Then dried and toasted. Not sure if that is the current process though.

I am not sure if that is the current process either, but I do know they start with ears of corn. They do not reconstitute from corn meal AT ALL.

The fried tortillas with sugar are nearly the same as a Mexican dessert called bunuelos. Cinnamon sugar is used over fried flour tortillas and it's served most often around Christmas time. Yummy stuff!

Use the baked recipe with the cornmeal on top to make honey nut cornflakes. Instead of sprinkling the top with more cornmeal, sprinkle it with almond meal (almond flour). After breaking it up, use a pastry brush to brush the flakes with honey on both sides. Then finish with your second bake. You could try brushing on the honey before breaking it up, but it might soften them up too much to break. The batter would probably be too soft to brush with honey before the first baking, but you could try it. Just some ideas you might want to try, I know you like to experiment.

The one you made with the dough makes me think of Blatz Kuchen which is a German pastry that my mom and family used to make. You roll it out super thin and then when it's out of the oven you brush melted butter on top and put sugar on it. It's really good.

Hi. Fun video and channel. On the corn flakes: what you are missing is the malt flavoring in real Corn Flakes. It is the combination of corn, malt, and salt that makes it taste the way it does along with the toasting. Looks like you are really close to getting the real thing copied. Best Wishes!

Agreed. True corn only tortillas have a very different texture. We made our own and it acts very differently without flour.

Luxilune No... you’re claiming that American tortillas are artificial, but they aren’t. Real corn tortillas are made of masa harina, water, and salt. The packaged “corn” tortillas that he showed looked like flour tortillas. England doesn’t have an upper hand on tortilla production.

In Mexico there’s a dessert like snack called Buñuelo which is basically a pre-baked flour tortilla which is then fried in oil and finally sprinkled with cinnamon sugar while still hot. That more likely resembles the first attempt made in the video.

1. It isn't worth making your own. 2. I worked in the food processing industry we made a machine for making cheap cornflakes. Maize flour (polenta) is mixed into a stiff dough and squeezed through a disk with small holes in it. As it comes through cut the blobs off with a knife. Allow to dry slightly so they are not sticky and press flat between rollers. Cook in an oven until golden and crispy.

Yes, I always have to wear an apron whenever I cook with flour or corn starch because that stuff ends up everywhere. I once was keeping my cocoa powder in a ziploc bag, inside a air tight bowl and I was soooo sick and all I wanted was hot chocolate, well I got everything together and went to put away the cocoa powder and wasn't thinking, obviously, because I grabbed the bag and squeezed it, you know, to remove access air so it would fit in the bowl. That cocoa powder turned into air and was ALL over my white kitchen. I almost cried. I left it, I couldn't do it, I was too sick and instead of grabbed the dust buster, I grabbed a wet rag which made everything 10 times worse. Needless to say it stayed that way until my husband returned from work. It's funny now but not at the time

I'm thinking Grind up the corn meal into corn flour. Then make your batter with honey water, vanilla and sugar (pinch of salt). Then pour it super thin. Now I want to try this! Sounds like it would be great.

Version 2: make the batter much thinner and pour it in the pan like a VERY thin crepe. Do NOT sprinkle with extra corn meal but consider sprinkling on a tiny bit of sugar. Break it up by laying it on a towel and rolling it with a rolling pin. I suspect that would make a better product.

What I did was corn flakes in a bowl. Adding homemade apple & cinnamon syrup added white sugar mix well. It’s was good! This is how I made them taste like Frosted Flakes I didn’t even use milk. Just ate them so.

The first ones, the tortillas, are basically something called "sopapillas" and you fry them, , take them out, blot them free of the oil as much as possible, and cover them with cinnamon and sugar, for basically a mexican donut. Although, some people do use the flour ones for that. But not always

Barry, I have a a bit of advice for trying to evenly spread things in a pan like you were doing with the corn stuff. put a layer of waxed paper on top of it so it doesn't stick, take a pan of the same size, and press it down to flatten and spread the batter/dough.

If I were to try to make it (which I do think I will) I’d use masa Harina , which is the flour to make corn tortillas put a pinch of salt and water with just a bit of honey and vanilla added and make a paste. And then proceed as you did with the second batch.

To get the dough really thin, try rolling it out with a pasta machine. for honey nut cornflakes, try this... use honey with the water when you make the batter. and then sprinkle ground nuts on top of the batter instead of the cornmeal, and bake

Thicker corn flakes are a win in my book. I mean, think about it, they stay crunchy for more time, and when you get to the end of the bowl instead of having soggy corn flakes you have flakes that are soggy on the outside and crunchy on the inside, what a texture combo!

In the beginning you made actually made 'buñuelos' (the fried tortillas with sugar)! In Mexico we usually eat them around the holidays, except they're also bathed in this maple syrup like liquid, so they're sweet, sticky, not as crunchy due to the liquid. People will make them themselves or purchase them. They can be made fresh with batter and a flower like mold, or in this case, people also make them by frying tortillas.

thank you, I recently found out i have MTHFR mutation which means i get ill from folic acid (which is not folate its man made) surprisingly about half the population have it but most people just don't know its effecting their health. i love cereal and i cannot find many without folic acid added into them so i am going to try following some of your videos for these. i am looking forward to the rice crispy one because those are my favourite. thanks

The honey water is a cold remedy, at least in my family it is(I’m from Central Florida). Boil water like you’re making Tea and then just put honey in it and it’ll help with a sore throat and cough.

Not sure if anyone suggested this...but if you do the second type... spread it on half a sheet of parchment paper... make it thin...but then fold over the other side of the paper onto the batter... Squish it and gently peal it back... it will be thin, super thin without adding water... Hugs

We’ve got a version of “Corn Flakes” here in Texas, very similar to the oven method. Use a bit more of the vanilla extract and use regular AND raw sugar, before you put your sheet in the oven to bake it. You sprinkle just a little bit of bourbon(flavored or not), and it gives it this nice manly smell and you burn off all the alcohol so that you don’t get lit off your breakfast. 🤙🏾

I'm from south in USA we grew up eating warm cornbread with milk and sugar some older people like it with buttermilk. Not as a cereal but a snack. Have you ever tried cornbread? There are tons of variety and so simple to make. It's great with chilli or soups too.

If you like to add sugar to regular corn flakes you should go with frosted flakes. Adding sugar to corn flakes is like adding salt to a can of salt free green beans.
