Sichuan hot pot is one of my favorite dishes to have with family on the holidays! We are having 2 different hot pot one is spicy mala hot pot , one is tomato soup based hot pot. Making some turkey meatballs as Thanksgiving special! All the recipes listed below, And the bone soup (Superior stock) recipe is in my new cookbook, link down below!
First recipe Turkey meatballs:
1/2 pound ground turkey
1/2 pound ground pork
1/2 cup panko
1 egg
2 chopped green onions
2 tbsp chopped ginger
3 tbsp soy sauce
2 tbsp Chinese cooking wine
Pinch of salt
Makes about 30 meatballs
Tomato soup base:
6 Tomatoes
2 tbsp(20g) Chopped ginger
1/2 Onion
1 bulb of sliced garlic
2 tsp salt
6 rock sugar
1 tsp chicken bouillon powder
3 tbsp cooking oil
Steps:
1. Cut a cross on top of each tomato , add hot water and soak them in. Then peel the skin.
2. Peel the onion and ginger chop small, then put both in the food processor, make a paste.
3. Use 4 tomatoes chopped into cubes, then in the food processor blend them into tomato sauce. the other tomatoes chop into bigger pieces.
4. Add cooking oil in a wok or pot, stir fry the ginger onions paste for 2 minutes, add fresh tomato sauce you just made stir fry with ginger onion paste cook for 10 minutes.
5. Add rock sugar, salt ,chicken bouillon powder, cook in the sauce until all mix well. Pour the sauce in a bowl.
6. Stir fry garlic in a clean wok with oli, add chopped tomatoes , stir fry until the juice comes out. about 2 minutes.
7. Add back the tomato sauce mix well. Then add "Gao Tang" the Chinese superior stock.
Spicy Hotpot soup base
4 tbsp cooking oil
10-12 dried chili peppers
2 tbsp Sichuan peppercorns
5 clove chopped garlic
2 chopped green onions
2 tbsp chopped ginger
3 tbsp fermented black beans
4 tbsp Sichuan Chili bean paste(Dou Ban)
2 tbsp rock sugar
2 tbsp cooking wine
2 star anise
Use hotpot package for Beef tallow or add 1 cup vegetable oil instead ( make a vegan version, later add vegetable stock)
Stir fry all the ingredients , add beef tallow mix well. Add Chinese superior stock.
Hop pot Dipping sauce:
3 tbsp Sesame oil
1 tbsp chopped garlic
1/2 tbsp cilantro
1/2 tbsp Chinese vinegar
2 tsp oyster sauce

Lord I can't wait for the cook book. I am always in my local Asian grocery asking the owners what something is. How to cook it or how to eat it. Thank goodness I've been going there since I was a child. The owners know me. Haha. I cook regular American food for my family but I cook myself Asian cuisine. It has changed the way I eat. I've lost weight. So much fresh foods. Thank you for your videos. I copy your recipes often. Great job!!

I'm from South Africa and we call the cow stomach " Ulusu" , we don't remove the layer . When we cook it we use salt and onions , but some people add peppers , carrots etc . Its very delicious 👌🏽

I'm native American (Kiowa and Navajo) , and I have such a fascination how other people from different cultures celebrate Thanksgiving, I absolutely love all the meals and dishes she makes !! I gotta get my family to try a hot pot 😋🥰 thank you so much 🙏

I LOVE hotpot! 💕 My white American mom always said she didn’t like Chinese food and preferred Japanese food because to her, it was healthier. I tried to tell her that Americanized Chinese food is fattening and not accurate, but real Chinese food is much better! While living in Paris, a Chinese friend of mine took me and another friend out to eat at an authentic hotpot place (everyone there spoke Mandarin except me, an American adoptee from Kazakhstan, and our Hispanic friend 😂) and I feel in love! When my mom came to visit me in Paris, I got us a reservation at the same restaurant and, although she was hesitant, she LOVED it too! I finally was able to show her some authentic Chinese food that was yummy and healthy. :) Thanks for making your videos, Vivian! 💕 As an Asian who is culturally white American and trying to get more in touch with Asian cultures and cuisines, I really enjoy watching your videos. Also as an ESL teacher, I love listening to you and your ESL journey. 💕❤️ Happy belated Thanksgiving to you, your husband, and your circus! ❤️🦃🍁

Yes. Chinese food made from panda express and authentic Chinese food are very different. I ate in China restaurants and home. It's very refreshing and less oily

on average, id say Japanese food is more on the healthier side than Chinese food though. I'm Korean and thats the perception we also have of the two in Korea. Its not necessarily a bad thing, as Chinese foods are known to be more flavorful and spicy, which Koreans LOVE. Malatang is a huge thing rn in Korea. Chinese foods use quite a lot of oil in many dishes, whereas Japanese foods don't. So if you are mainly considering how oily the foods are in terms of "healthiness", Japanese foods are healthier.

@@crystaly7159 I’ve lived in Korea! And yes, the dishes usually offered in Chinese restaurants in Korea tend to be higher carb and noodles, at least from what I’ve seen. 자장면 was one of my fav Chinese noodle dishes to order that you don’t see a lot in American Chinese restaurants. Then again “Chinese restaurants” in the US have sushi, so…not really authentic 😂. But as for Japanese restaurants in Korea, I love 돈카츠! 찐자 맛있어용~~~ 🤤 neither donkatsu nor jajangmyeon are healthy tho lol.

@@Sophie-dd5xr haha 안녕하세요 ☺ I'm glad to hear you tried our own rendition of both cultural foods (maybe not for the 돈가스)! Jajangmyeon is our own rendition of a Chinese noodle dish that you cannot find else where, probably that's why you cannot find it in USA. As far as I know, Chinese immigrant in Korea created jajangmyeon decades ago to cater to the Korean taste. btw I wasn't merely talking about Chinese foods I've tried in Korea. I've been to China and tried the local dishes. I'm currently living in Europe and there are a lot of small Chinese restaurants run by Chinese people. They have authentic Chinese dishes and I loved them all. It's just sometimes I struggle with some dishes because they are often too oily for my liking. As for Japanese foods in Korea, I have no idea how authentic they are, as I haven't had enough experiences with authentic Japanese foods 😣😂 What I heard from Koreans who visited Japan frequently and tried the local foods though, they said it was sweet and salty for their taste. Nobody really talked about foods being oily. Idk maybe authentic Japanese foods can be as oily as Chinese foods. But yea, it was just my personal observation and the perception we Koreans have in general of both cultural foods. Anyway wish you all the best for the new year ☺🎉새해 복 많이 받으세요!

The spicy hot pot looks super flavorful and delicious. I love the base ingredients you used. For me, I would just take out the meat and add some seafood at the end. Also, thanks for showing us the front of the packages so that we can find the best authentic items in our local Asian market, or online. 🦃🥢

Awesome selection of ingredients. Your kids might not appreciate Hot Pot now but they will when they get older. Love seeing the preparation. Waiting for covid #’s to go further down and I’ll be heading to a Hot Pot restaurant with friends. So miss this style of dining. Thanks for the memories ♥️👍🏼

I love those bean curd sheets. Best chewy texture ever! Sometimes I slice them into strips to look like noodles and just eat with chili oil. Yum!

I love Asian culture Bc they eat a lot of the things that I grew up eating and love but my American friends get grossed out for some reason. Like cow stomach, chicken feet, pig feet, chicken gizzards, I could go on but when people post videos of certain things I’m just excited to try a new recipe 😂. Happy thanksgiving to you and the fam 💕

It’s wonderful your parents showed you different parts of the animal that you can make recipes with. It’s sad when Americanized families believe only certain things are good to eat. That animal was killed and mostly all parts can be used instead of wasted. It’s sad. That’s how i feel at least

Every single part of the body gets used, some prefer some parts more over others but it’s lest waste at the end. Especially in the country side animals are valuable ,,, it would be a waste and we would eat through them fairly fast if we only ate the common parts

I want to swim in your hot soup base; I'd add every ingredient except for tripe. My friend from Hong Kong got me to try it cooked in different ways, but I can't stomach (pun intended) it. I was force fed it as a child by grandparents that didn't like me much (true) and I couldn't get over my aversion to it. I've been stocking up on Szechuan peppercorn, dried peppers and chili oil, thanks to watching you cook. The chili oil is disappearing fast because I'm adding it to almost everything I cook. Happy Turkey Day to you and your family, Vivian. Your au pair is so lucky to have authentic Chinese food to eat! I'm Canadian so have already had my feast in October.

I really enjoy your Channel Vivian. I was wondering if you could do a show on how to make 四川豆花. I ate this several times when I was in Chongqing. But I think the best one I ate was in a small restaurant in yongchuan. This is such a delicate meal, delicious. Thank you so much for all the wonderful videos.

Omg that looks delicious! Im African American and my husband is from India. I love to make your dishes for him and they always taste amazing. Respect on making the base broth. I'm lazy and just use a packet. I was introduced to Sichuan Hot Pot over 20 years ago by a friend from Chengdu. I surprisingly have a great authentic Sichuan Restaurant by me in Minnesota and I have never had hot pot there, its too easy to make at home. My family has it at least twice a month.

Just happened to come across your video today; I was actually wondering how we could miss the most authentic Sichuan cuisine - Spicy Hotpot, and there you go 😋, love the Sichuan cuisine even I have only been there once, love it so much. My grandma who passed years ago used to tell me about her parents eating tripe but they cooked it Italian style. She hated it. I wanna try it like this. Your family is beautiful too. Just keep giving them cow stomach and mushroom they’ll grow to like it😉 I grew up the same way, wasn’t into intestine, cow stomach, pork blood, basically all the innards, but as I grew older I love it now

I learned it from my Chinese friend that the reason why they’ve having hotpot because they’re somehow teaching the young ones to cook for their own foods.

Vivian, i like how u completely used shitake mushrooms with stems , i eat stems too which i find normal and having from childhood but in many literally many cooking channels they did remove stems i felt i am the only 1 who does that. And i love the fact that how u keep ur environment very normal looking and kid saying as usual things which happens in our houshold too.

Wish I was enjoying the taste pleasure of your cooking always. Watched a few videos on Tiktok. Nutritious food prepared with love and humour. Who can ask for more!! Your family is blessed. I miss living in the city walking distance from the Asian supermarket, with the lovely vegetables. I found calabash recently at our local almost everything .Chinese shop .First time Ive seen it in 6 years im living here, they dont sell Asian veg. The lady said no no, is for Chinese people, She buys the box for herself. I had to convince her that I knew what it was before she let me buy it. I'm South African,of Indian decent, calabash is part of our diet as is with Zulus. We use the inner dried out as bathing loofafs. Take care and go well. Xx

Oh I love wen Viv,says 100%made in China.I am from Scotland,we had tripe&onion potato in a milky butter soup alot growing up.Do your family eat tripe(sheep intestine).I am in canada for many years now&no tripe anywhere. Love your videos.Ty for the circus,haha.❤🇨🇦

Do you know that we Vietnamese put cow stomach in our Phở too? We dip the stomach in a sauce called Sa tế (which is quite similar to Laoganma), oh so yummy 😋

My nose hurts just watching you make spicy broth 😆. I love hotpot and need to make some soon since no restaurants around me. I’ve never done tripe in it, but I prefer honeycomb tripe anyways and I think they would take too long.
