This is Japanese fine dining, haute cuisine, right? Your teori sushi plate looks like a tasting menu on a plate (except for the relatively large portion of rice on the side). Love the inventiveness of all of it, combining traditional Japanese sushi with the experimental spirit of Western fine dining. That white miso milk cream sounds interesting, would try it.
