If they are serving a5 wagyu, they really don't need to do anything to fill people up. Like the fact content is so high on that its basically twice the calories of other beef. Like 8 o.z. of a5 wagyu is 1300 calories and 90 percent of those calories are fat. Don't take my word for it just google a5 wagyu nutrition.

The practical reason is that fattier meats have more margin for error for cooking then leaner meats. It's good for gauging how long other stuff might take to cook. But depending on how often they clean or change the grill you're using, it can even be used to "season" whatever you're cooking in to help impart some of the flavor to the leaner cuts. The oilier meats can also be harder to stomach as you eat more later on.

Japan did the same with Wagyu. In the US we can get it now, but for years it was only available at extremely high end places. In 1994 we started producing our own “US Wagyu”, but before that we could only import it. Japan wouldn’t give out the secret to how it was produced. So from 1975-1994 they were totally gatekeeping their beef. 😂 But, imo Hanu beef is far superior to Wagyu. If you get a chance to try it I think you’d like it. Australian beef is also absolutely amazing. I’m a big fan of beef, can you tell? 😂😊

No its not criminal. They are serving a5. A5 costs 130$ a pound in the United States. Its actually a surprising that they can stay open serving all you can eat in Midtown Manhattan, the single most expensive real estate market in the world. No one is forcing people to eat there, its an indulgence/luxury. They could probably charge 50 percent more and people would still come in NYC. This is a city which has multiple 350$+ Sushi Omakases.
