Okay so I made this today and it was incredible. I also made this on a weeknight and love mushrooms so my updated version was: scallions, ginger paste, garlic paste and chillies in a pan. Add the mushrooms to the same pan. Make the broth and add that to the same pan, cook the noodles in the broth for a few mins, add some tofu and bak choi and then serve!

I'm sure you get this a lot, but I am not vegan, and I loved this. I made it last night, only slightly reducing the amount of miso because I don't like very salty food (reduced by about 2tsp), and it was wonderful - savory, brothy, right amount of salt, diversely textured... I cannot wait to eat leftovers for lunch today! I am saving this recipe. I've been looking for a savory, vegetarian/vegan umami dish that includes noodles. Not that easy to find something that hits the spot. This is worth making over and over again! Thank you!

Nisha olive oil has a smoke point of 405 - 410! you should use vegetable oil or avocado oil !

Just made this. My bf said he wouldn't mind having it again, but I didn't love it. Something about the foamy texture of the broth didn't sit well with me and probably would have liked it more without ginger. But it was an interesting experience.

I love the flavor of mushrooms and cook with them a lot, but they barely have any calories or protein. Luckily, I'm a huge fan of tofu and can always add it to any dish. Looks delicious!

Would the oven technique also work for your mushroom stroganoff recipe? I spend ages cooking the mushrooms in the small batches in the pan. Still one of my absolute favourites that I love serving for mushroom and/or vegan skeptics - and eat myself, it’s so comforting. Excited to try this soup out! 🍄

Does anyone have recommendations on what brand of soy or oat milk to use for recipes like this? I made this tonight and it tasted SO good! My only issue is, despite using unsweetened soy milk, it still has a sweet, almost vanilla like aroma. I’ve had this issue before with savory dishes and I’d like to know if there’s a better option for plant milks. I used Silk- organic unsweetened soy.

🥰 thank you! Sure, you can saute or pan fry them in oil and they’ll taste great but won’t get very crispy. If you have access to oyster mushrooms, or maitake and tear them into thin strips and cook over medium high heat, they will get a little crispy :)

Udon noodles typically only contain wheat flour and water and salt, at least all the versions I’ve seen (maybe you’re thinking of ramen noodles?). But yes, reading labels is always a good practice when you’re vegan. I’ve definitely been duped by seemingly vegan products many times.

I love the flavor of white pepper in a lot of East Asian dishes… It’s bright and a little fruity, but also a little funky… You can skip it or use black pepper if you want though.

Yes, the broth will stay good in the fridge for a few days, but you’ll want to heat it up on the stove and whisk it as you go; you might need to add some mushroom broth or vegetable broth to thin it out, depending on how much it thickens in the fridge.

Hi there! I’m not 100% sure since I’m not oil free, but if you use parchment paper and oyster mushrooms, you might get decent results. You’d want to check frequently though because they might burn more quickly. Oh and I don’t think I was prepared for the spice level after adding both fresh chili peppers and chili crisp 😅 it was delicious but made me sweat!

OK so we tried this and it works well, but it felt like an unnecessary extra step because you still get amazing flavor without doing it. But definitely try it out. Just be sure to drain all the grit from the soaking water!

There are differing schools of thought on this, but I personally avoid washing mushrooms to prevent them from absorbing water and to maximize their ability to crisp up.

They make the broth extra creamy but I think it would still be tasty without them. If you want to replicate some of the nutty richness, you could try a spoon of almond or cashew butter.
