I just wanted to let you know that I made the Spanish orange cake and it is really nice! I also made your lemon garlic potatoes and I added carrots and parsnips for Easter Sunday to have with roast lamb, they were really good and I added fresh thyme to them aswell! I am from Barcelona and everytime I see tarta de santiago in the bakery I buy it, its delicious! Also I always put moscatel on top, because that's how they told me to eat it but its still amazing without it.

How wonderful! An almond pudding for St. James on St. Patrick's day. I especially love there is no wheat flour (so not a "cake" as we call them here in America) which means I can eat this. I will have to try it. Thank you!

I have made this several times and I found if I separate out the yolks and whites. I mix the yolks in, beat the whites until stiff and fold in the whites. it lightens it and gives a lovely chewy texture. Not traditional, but was a hit in Madrid when I made it.

This is a Amazing cake - thanks for this video - and the recipe is perfect! I suggest to use a manual grinder instead of foodprosessor, because the almonds gets very dry and all the almond oil will be be in the container instead of in the almond. I don’t peal the almonds, but grinds them with the skin. The almond flour will be a bit darker, but with more taste. If you have some Amaretto liquor: add 5 cl for amazing almond taste!

!Hola Albert! - SOy Portugues (pero vivo en Brasil) y me encantan los dulces de almendras. I have been making this Tarta de Santiago occasionally, but recipes are quite variable. I have tried with beaten eggs, not beaten (like yours's here), with 5 eggs, 4 eggs, etc. But I was not very pleased with the texture outcome (too much cakey if eggs well beaten with sugar, or too much custard pudding like) but this is the first one where the weight of almonds is not the same as sugar, it is more... so may be this is the trick. I'm going to try this one. Almonds are quite expensive here, I may substitute part for cashew or peanut meal homemade in a processor.
