That looks great Sam! I remember having that often as a kid. I would love to see you do Chicken Marsala, I love that sweet taste of the Marsala wine with the savory taste of chicken and the earthy mushrooms.....maybe some smoke from a bit of bacon? Please?

don't throw the "grease" away just to replace it with unflavored oil. Those drippings have a ton of flavor

Yeah I wondered about that. Could just use the grease instead of replacing it with oil (unless the grease would change the flavour of the veggies too much and the intention is to have something more neutral)

I was 16 in 1976. I worked at an Italian restaurant that made chicken cacciatore. I tried for years to duplicate it. On about the forth time trying I used almost all your ingredients and also added anchovies, sautéing them at the same time as the garlic and I was able to achieve the flavor I remembered. Thanks for reminding me. I will have to make it again soon.

I made this a couple days ago minus the olives because only I like olives around here. The capers made it AMAZING (I added a bt of the liquid too). Looking forward to making it again. Served it over rice. Had one large thigh left over. Pulled the meat off, mixed it with leftover sauce and rice, threw in some frozen peas and had incredible meal the next night. Thank you for sharing this.

An all-time favorite dish that should be in everyone's repertoire. It never occurred to me to use pre-roasted red pepper, nice tip. I switch vermouth, olives, and capers out for sauteed mushrooms and reduced wine.

Loved this. The wife loved it. Even better the next day. Made a couple variations though, used ditello cherry tomatoes and baked it in the pellet grill.

My father used to brown the chicken pieces in a roaster then add veggies and put the chicken back in and slow cook all day. You never got a whole piece of chicken but you usually had chicken in every bite!

My dad used to make chicken cacciatore at least every 2-3 weeks and I remember completely devouring my plate and leftovers every time.

Nice. Why do other cooks recommend we NOT cook tomato-based recipes (or other acidic recipes) in cast iron? I know I can google it, but I’d enjoy Sam’s opinion😉

I was wondering the same. It should be ok since it's not all tomatoes although it's a ton of tomatoes... technically you will be fine but you will know if you get metal in your food if after rising off the cast iron pan, you see the seasoning is cleared down to bare metal

If you clan your cast iron after you cook it won't her it at all. I use cast iron skillet constantly. I never have any issues with any tomatoes. Never any metallic taste in any foods. If someone in your family has to take an iron supplement start cooking in iron.

This has been my dad's favorite meal of all time. He was adopted when he was 7 to an Italian family in Youngstown, OH and his mom made this all the time hence why its his go-to.. I think it let's him reminisce of a time where he had a great meal with his family who loves him. 🍝

Looks fantastic Sam. When I make my chicken cacciatore I like to buy some buratta cheese and put in on top at the end and use my torch to brûlée it/ melt it a bit. It’s frickin amazing!!! Been enjoying the show for years. Much love from Arizona!!

Highly recommend Cacciatore with white rice (if you're not a health nut concerned about carbs)... The white rice pairs so well with it. My dad makes this nearly identical recipe, but shreds the chicken then ladles it on a bed of white rice, and it is amazing.

Love one pan, set it and leave it dishes. Some white rice cooked in chicken broth would go great with that.

This is a good idea, my Mom used to make this in the 70's when I was a kid too. Although in the 70's I was a MUCH younger kid than you. :) This would be good on riced cauliflower too to keep it lower carb. Thanks for the idea!!

I thought cooking something tomato based in a cast iron pan is sort of a no go bc it reacts with the iron. What do you think about that sam? Either way love the channel and cooking and plan to make this. Cast iron is my go to for everything but sauce

If the pan is seasoned well it should be fine. Just don't let it sit after you're finished cooking.

You can also use soap on your cast iron! (As long as it doesn’t have lye in it)
