If you're not using this bun recipe for your burgers, then how can you claim to be having the "Best" burger?
Burger Bun Recipe: (Yields 10)
Tangzhong: (roux)
40 g bread flour
255 mL whole milk
Remaining Ingredients:
60 g cold butter, small cubes
1 whole egg
14 g milk powder (makes buns extra fluffy and tender)
50 g sugar
7 g kosher salt
7 g instant dry yeast
365 g bread flour
Step 1. Making the tangzhong. Combine the milk and flour in a pot on high heat and continuously whisk vigorously until you reach the consistency of pudding. Remove from heat and add your tangzhong to your stand mixer bowl.
Step 2. To your cooked Tangzhong, add the cubed cold butter and vigorously whisk until fully incorporated. The cold butter will help cool down the Tangzhong BEFORE you add the egg. You don't want your egg to scramble. I don't add the egg until the temp of the tangzhong has dropped to around 110F or lower.
Step 3. Next, add the egg and whisk until fully incorporated. This is easier than making brioche.
Step 4. Now add the remaining ingredients and attach your dough hook. Start on low speed to mix everything together. Then move up to medium speed. You will have to periodically stop your mixer and scrape down the sides of your bowl.
Step 5. Let the mixer knead the dough for about 15 mins or until a nice smooth-ish dough forms.
Remove the dough and shape it on your work bench. Oil the mixing bowl and return the dough. Cover with a towel and set inside a TURNED OFF oven with only the light on. Let it proof for an hour or until doubled in size.
Step 6. Remove the dough and portion them into 80g dough balls. Shape them into to smooth little doughballs and set them on a parchment lined sheet tray. I like to put 6 on a tray. This gives the buns plenty of room to proof without sticking to each other. Cover them w a damp towel and let them proof in the oven for 40 mins.
Step 7. After 40 minutes, REMOVE the buns from the oven and preheat to 350°F. While your oven is preheating, prepare an egg wash, 1 yolk, and 3 tbsp milk. Whisk and then gently brush onto your buns. Sprinkle with sesame seeds if you like.
Step 8. Then bake for 25-30 mins rotating halfway through the baking process and continue until golden brown.
Burger:
1 fresh milk bun (toast them)
Two 2.5 oz patties (I used ground chuck today)
2 slices of American Cheese
half of a thinly sliced onion
butter to toast the buns
pickles (use your favorite)
Burger Sauce:
3 tbsp mayo ( I used my own mayo. Recipe: • Homemade KEWPIE | Japa... )
1 tbsp sweet relish
1 tbsp dill relish
1 tbsp yellow mustard
2 tbsp apple cider vinegar
1 heaping tsp paprika
1 tsp garlic powder
Combine all the ingredients and mix until fully incorporated
