The Perfect Thanksgiving Turkey
Deciding how to cook the thanksgiving turkey can be stressful. In fact I recently read this poll: the average person will make “3 frantic phone calls for family help when cooking TG dinner this year” and even if they aren’t cooking, 61% will still get stressed out (SWNS 2020).
But a switch went off in my brain when I realized it’s pretty much the same thing as just roasting an extra large chicken. We can do this!
There’s a few things we need to prioritize:
1. Crispy skin
2. Juicy dark and white meat
3. Timing
The key to all of these is “spatchcocking”.
Crispy skin: The flat shape of a spatchcocked turkey faces all the skin upwards, allowing us to cook evenly at a higher temp.
Juicy meat: The exposed dark meat will cook faster and finish 20F degrees hotter than the lean white meat, for optimal internal temps (If cooked whole, the turkey would need to be pulled at around 160-165F, at which point the white meat would be over cooked, thighs undercooked).
Timing: Lastly the thinner shape allows an average sized turkey to be done in about 1.5 hours!
Dry brining is another important step (avoid if turkey is pre-brined), and the compound butter is an update from last years recipe. It imparts flavor under the skin, but perhaps more importantly, leaves us with buttery herb drippings that can be used to moisten up the turkey prior to serving.
Note: the USDA recommends cooking turkey to 165F (at this temp, poultry is pasteurized immediately). However pasteurization is a combination of temperature AND time. After pulling at 150, it will carry over to 160F during the rest, for a fully pasteurized (and way more juicy) turkey.

Super easy. I have been using salt and sugar dry brine for years and it always comes perfect. I leave it for two days uncovered in the fridge and let it do it’s thing. It’s so crispy on the outside and super moist on the inside.

For all those saying it takes a whole day it's always best to dry brine the day before at least. When he said less than 2 hours he's talking about the cook time. Prep time is always longer.

My big sis is the complex cook in the family, and she can replicate just about anything she wants to. But... she's never been able to do so with a turkey I made when I was 12 years old. Aside from the special cut breakdown you did, this was pretty spot on for my own process, no lie. Being able to go to town with all my favorite seasonings and butter (probably almost 3 sticks lol), it was the juiciest and most flavorful turkey my family had ever tasted. (And this was probably 25 years ago.)

It works really well. I put my stuffing in the pan underneath and it was fantastic. It cooks so quickly that you have to take that into consideration when you’re planning the side dishes

I made the best spatchcocked turkey today. Juicy, well seaoned. It was similar to this one, but I didn't dry age the skin or put a rub on it. I put combound butter under the skin with fresh rosemary, some salt and poultry seasoning. That's all I had.

I’m very cool with new recipes. Especially on the holidays. The turkey looks excellent. But what I really liked is the way you carved it and put it on a serving platter. I don’t mess with an overnight dry brine, as mine is still usually defrosting until the morning of… I have spatchcocked my turkey for probably the last 10 years, almost always smoked, weather permitting. I make a simple Country Crock and Tony’s Creole seasoning and coat the whole bird under and on top of the skin. The oils help fry and crisp the skin on both sides and keep the meat juicy. Turkey, like chicken, doesn’t take much smoke to have a distinctive smokey flavor, so some light fruit wood mixed with pecan is my go-to.

If you've been smoking turkey for 10 years and don't either wet brine, dry brine, or inject your turkey... then you are seriously missing out... and try a fresh turkey on the smoker, there is literally no better way to eat turkey.

@@althompson8417 I do inject with the Tony’s butter. I just let the bird sit with the rub all over it for an hour or so before I put it on the smoker. I may try a wet brine for Christmas this year.

Spatchcock turkey, Cornish hens and whole chicken now because the flavour and golden brown crispy skin is amazing. Use sharp kitchen scissors to remove backbone. Agree with Tibby it’s exciting.

My dad made a turkey for thanksgiving and he accidentally smoked it upside down and he didn’t find out until he went to cut it and was only getting dark meat. Then he flipped it over and…….yah. But idk how it ended up being the juiciest turkey I’ve ever had. Literally dripping. The only thing was he had put most of the seasoning on the other side so there wasn’t much seasoning but it was still 100 times better than any turkey I had ever had

Cooking poultry upside down is how you get juicy white meat. It's a commonly used technique. When I use a verticle roaster I break the breastbone and put it on the rack upside down for that reason alone.

thank you I got a lot of turkeys for after Thanksgiving and even though this is for chicken, the turkey concept will apply the same and it is true taking that backbone out really those wings and stuff from drying out complete waste. I do not season the skin as much because after I’m done, I peel the skin off and I fry it, using every part of the bird

I use J Kenji Lopez Alts recipe and it’s 6 tbps kosher salt and 2 tbsp baking powder for the dry brine. I had a 14 pound bird and did not use that entire mixture, maybe 3/4ths and I was satisfied it was sufficient.

I've spatchcocked two turkeys and they were so amazingly and cook so fast! I just need to get a deeper sheet pan to catch the drippings under the wire rack.

I hate to clean the oven after an open turkey is cooked in it. I use an electric roaster and the breast skin is cut off prior to carving and crisped in the oven with no mess. I got rave reviews again this year. The gravy is the PIA to me. This year I bought Harrys gravy from Sam's club. Taste tested a day before I cooked the turkey, saved a lot of hassle. It is good stuff.

"Less then two hours" - "The next day.. you take it out of the fridge"... Oh, so I can only prepare this around 10-11 pm at night.. so I can get it out the next day at around 1 am or 12am, makes sense.
