can you tell me if i just don’t want to use eggs and go thru the trouble of making aquafaba-then what would be the best substitute as im doing this for commercial use and want crispy waffles

Hi there! Aquafaba in my opinion would be the best choice here both for a fluffy and airy texture, binding and crispness. But as a second choice you might want to try a commercial egg replacer like EnerG, the vegan egg, etc., and simply add it as a binder without having to whip the stiff peaks. But I haven't tried it with this particular recipe, so I'm not sure if it would work in terms of the amounts given but feel free to experiment! Other options: ground flaxseeds mixed with warm water and letting it rest to form a gel, using applesauce or even a pumpkin or sweet potato purée (if you don't mind the taste coming through a bit).
