I think the reason we all liked this version of Gohan (when he was the strongest) is because many of us watched DBZ as kids. Seeing the torch being passed down to Gohan and being entrusted to defend Earth felt so emboldening to watch as a child, almost as if the torch was also being passed down to us.

Part of the reason there became massive gaps between the Saiyan's and Piccolo was due to zenkai boosts in the Namek Saga and the main way Piccolo got his massive jumps in power. Piccolo doesn't get those zenkai boosts after near death experiences like saiyans do, if he did that plus his natural regeneration would be a nasty combo, I mean look how much they dud for Goku and Vegeta who had Dende and the healing pods. Plus besides training the few times Piccolo got massive jumps in power was when he absorbed other Namekians; Nail on Namek and Kami in the Android/Cell Saga. If Piccolo had more Namekians to fuse with (there are the ones on new Namek but they're doing they're own thing so Piccolo doesn't really have a need to absorb them) he could see even larger leaps in power with his new form. There is the Dragon God who created the Super Dragon Balls in the series, so since Earths shenron was able to bring that much power out of Piccolo is Super Hero, imagine how much Super Shenron could bring out of him or how much stronger he'd get if the Dragon God was a namekian and they fused with Piccolo

Piccolo got weak because Vegeta took his place in the story. Piccolo used to be the big bad. Same as Vegeta. Piccolo used to be Goku's rival. Same as Vegeta. Piccolo used to be the tactical one in the group. Same as Vegeta. Piccolo's story was also wrapped up by the Frieza Saga (stopped being evil, became a guardian of earth, learned about his heritage, fused with kami) Meanwhile, Vegeta's character arc was still ongoing (still got that evil streak, is trying to adjust with living as a non-evil person, hasn't found peace with himself/is obsessed with being stronger than Goku.) Tien and Yamcha got the same treatment. Both were introduced as rivals of Goku, villains, etc. and both faded out as others took their place.

Gohans mystic forms works similarly to how the super saiyan powers work, there is no point to mixing it with super saiyan because it already is a more powerful form. Think of it this way, why go ssj1 when you could go ssj2?. And you already have what your asking for Beast gohan is the next step past gohans mystic form, he made it clear that he wants to persue his own path/power insted following in goku/vegetas steps.
