My mum is visiting us this week and I’m cooking our family dish - chicken with potatoes and carrots. Very simple, tasty and with a little secret twist at the end. Every family has its own stories, sometimes half forgotten. My mum likes to collect theme. As I cook, I would like to share one of them with you.

INGREDIENTS:
1 chicken breast
Salt and black pepper
1 tsp Oregano
1 tbsp Olive oil
1 tbsp Butter
2 Garlic cloves
1 Potatoe
2 Carrots
1 medium onion
Handful of parsley
Sauce:
3 tbsp Honey
3 tbsp Sweet Chili Sauce
1 tbsp Lemon juice
2 tbsp Soy sauce
1 tbsp Dijon mustard
Bake for 30-35 minutes at 200°C/ 400°F
