@@chadsimmons6347 20 years as a chef here. I taste all the dishes I make, with a spoon. I only use the spoon once, even though I cook for just my wife and I. if I need a second or third taste, I use a new spoon, because that is what a professional chef does. Your first certification as a chef is a sanitation course. Derp. No excuse for poor sanitary habits. Have you learned NOTHING in the past year? On top of that, she tasted a product in an unsanitary fashion that would be getting packaged up and sold to consumers. If it were her own personal kitchen, she would ALMOST have an excuse. Remember this the next time you buy paprika so you can wonder whose sticky fingers have already been in it, Einstein.

As far as I am concerned, the only true Paprika is from Hungary, as its flavor and aroma are unmatched by any other. The imitation stuff made in this Spanish plant is just spicy red chili powder and should not be called Paprika.

nah, the thing with paprka is that in hungary they mainly use a single type of pepper, while the factory in this video uses a blend of imported peppers. but make no mistek, in hungary there are also factories that use imported peppers to make their paprika, so.... i think it's more about the brand that you buy, rather than the place.

Well, that was disappointingly predictable. The literal 1st thing I thought was "they're probably mixing in some cayenne." Because those 2 should always be in a dish together anyway.

The 'good' spanish paprika comes from the other side of the country, from Cáceres. It is smoked, not kiln- or sun-dried, and has its own denomination of origin, Pimentón de la Vera.

@@SaraVV yes DO try...it is well worth the effort..for dishes with peppers of all kinds, will add layers of flavour. 💥My brothers are chefs with are history of winning the local Chili cookout...(4 times each ) ...this is their secret weapon!😀

well, we have hot paprika in hungary as well, it's just that sweet paprika was invented in hungary. my grandmother makes hot paprika paste from the pepper that grows in her kitchen.

Only my opinion, but Hungarian paprika is the very best. Not hot, but then it's easier to add that to your taste than to remove it. The level of actual paprika - of any origin - in supermarket 'spicy' or 'smoked' varieties is often very low. And they usually grind in both stalks and seeds.

This is a high volume factory using a blend of peppers to achieve consistency. One can make hot paprika at home simply by grinding hot peppers, however you may not achieve consistency as peppers will vary from batch to batch an year to year..

With the store-bought hybrid seeds, you can never achieve that goal. You can achieve consisitency (more or less), but only with STABLE varieties! This is why you never buy seeds from indusrial breeders! All of those are junk F1 (or maybe F2) hybrids, not stable varieties. That is why they change every year, or even from batch to batch, as you pointed out. This is how companies force you to buy seeds from them every year. They sell unstable hybrids; if you save the seeds from those plants, they never be the same as their stable parents.They will be every kind of in-between mixed varieties of the originals, but never be the same as any of the parents. If you want to make fairly consistant quality spices, you should buy seeds of some old heirloom varieties, or breed your own.

The plant genus is called capsicum, in some countries they call it paprika or chili. Species are bell pepper, cayenne, tabasco, chili pepper etc.

A good explanation as to why so much 'paprika' on the market isn't. Imho, European paprika is the best (if a true paprika is what you want) - it should be sun/air dried, and the final product should NOT contain stalks or seeds. That's not to say the supermarket varieties aren't usable - they're cheap and if you like them, why not? The thing that always concerns me, as with so many food products, is people thinking they either like or dislike something they've never, in reality, ever tasted.

@187 Media You're not Hungarian so how would you know anything about the grocery store paprika? If you put authentic Hungarian paprika next to the store bought stuff, none of the store bought stuff is bright red and fragrant like the real thing. Even the stuff sold in cans marked "Hungarian paprika" is stale and brownish red, not bright.

Hey people! I didn't comment to start a dispute! 😊😊 On reflection I've decided what the best paprika is. The ABSOLUTE best! It's the one you LIKE. Try them ALL - it doesn't cost a fortune considering how long it lasts. And if you don't like what you just bought, I just bet there's a senior citizen close by who'll happily take it off your hands. (Hint - that could be me.) For instance I buy a fairly sweet Hungarian paprika. Goes from a bulk bag into 2 salt cellars. One plain, one with 20% cayenne (approx - I don't weigh it). Which I use depends on my mood. There's a 3rd salt cellar with a 90/10 mix, because that's what my wife likes. Cooking and eating good food isn't a mutually exclusive activity. People don't just differ, they sometimes differ themselves day by day - I know I do. There's only ONE rule in both cooking and eating - ENJOY! And if you didn't? Well - there's always tomorrow. And lastly - OK, I was just trying to impress. They aren't really salt cellars. More like small jars with holes punched in the lids.

I had no idea there such a thing as spicy paprika until fairly recently. In the U.S. you'll likely never find pimentón picante in the vast majority of stores. Now that I know they just add cayenne pepper for the heat I'll start experimenting at home.

It's all chili. Go to Mexican store and pick up some of each variety. Some are large and sweet, some tiny and spicy. Chili Pequins are tiny oval shaped chili. They have a naturally smoky sweet spicy flavor but are expensive. Use it for that special dish.

Recipes for spicy food like chorizo usually add spicy peppers in addition to smoked paprika. The paprika itself isn't hot.

Yeah, I can't ever recall seeing spicy paprika. It's always the basic paprika and smoked paprika. If I want something spicy with paprika I'll add in cayenne or some other pepper to get the heat and taste I'm looking for. Of course I've still got bags of ancho, new mexico, and other chilis to use so I'm used to making various mixes depending upon the dish.

I did not know that it's cayenne pepper which gives hot paprika its heat. I love both and often use cayenne, but I use paprika all the time on just about everything. My mother's side of the family comes from Hungary and I grew up on the stuff. I also did not know that it was introduced to Hungary from Turkey, 300 years ago. This was an interesting video.

in germany paprika is what americans know as bell pepper. and even bell pepper is no pepper, its just one of many sorts of capsicum (like habaneros, jalapenos, etc.). and i'm pretty sure the paprika in this video is a chili. as the first europeans discovered chili on the american continent they realized that it is spicy, so it had to be an unknown kind of pepper. they didnt know that its a different plant and not pepper. and the name chili pepper was born;) that's what i have read as i tried to figure out why its often called pepper instead of chili.

Yes, kind of. They're bell peppers in that they're the same family of plants but they're a different variety than the bell pepper that you find in grocery stores here. A bell pepper in a grocery store here is many times the size of those variety shown to make paprika.

The paprika pepper is a large, cone-shaped chili pepper. It is originally from Hungary. The paprika is a fairly large red pepper and quite long, growing up to 8 inches.

This confirms what I thought. That the completely heat free chilies I was using were essentially just paprika. Or that paprika is heatless chilies. Same thing. Look the same, taste the same, only what they are called is different. Bell peppers won't work because they are sweet and have a different flavor.

Paprika? Spicy?!? I never thought it had much flavor, really, just slight bit of bitterness -- certainly not hot or spicy! All the paprika I've ever had just seemed to be there for adding a bit of color to food it was sprinkled on. So for hot I just go straight for cayenne.

I think part of the problem is that the paprika we get in the U.S. is pretty much geriatric. I have had paprika in Central Europe and it is indeed different from what we get here. Not hot per se, but a friendly warmth. And much, much fresher than ours.

My Hungarian parents said the paprika from the Kalocsa region is the best. I've been ordering it from The Spice House. It definitely is the best. The stuff in grocery stores don't even come close. Time to make chicken paprikash soon.

I have Paprika and have used it in the past and aside from the nice color, I don't find it spicy at all and find no taste in it at all. Maybe there's different types of Paprika?

Like coffee, the powder has to be used quickly before the flavor fades, and you can see in the video that they are grinding up the stems too, which will lower the flavor (better Hungarian growers/brands destem their peppers before grinding). The cheap stuff is mostly used for coloring. There is sweet paprika, hot/semi hot paprika, smoked paprika. Several different strains of peppers are used. They tend to be a shaped like a banana pepper or big cayenne pepper but have thick flesh and flavor like a sweet bell with or without some heat. Mexican cuisine uses whole dried peppers that are then processed as part of the recipe prep. Hungarian cuisine uses powdered peppers. Possibly it is because of the wider diversity of Mexican-type peppers.

This must be the paprika they sell in the UK because in the US, Spanish paprika is smoked and sweet. The Hungarian paprika sold in the US is spicier. It's also interesting that the more popular paprika in the UK is this type and Hungarian is more popular in the US.

Good paprika shouldn't be hot. But that simply opens options. It doesn't always need to be mixed with anything, and when it does, you don't need other people to do it. Don't mix the whole batch with cayenne or anything else. Just as easy to mix a small amount just before use. I keep a small salt-cellar of 80/20 paprika/cayenne for cooking and general seasoning. Use it all the time. I've had a small batch of plain Hungarian paprika for a while. Not sure what I'm going to do when it runs out - just not available in my area. Might have to try Amazon, etc.

Paprika means pepper In Hungarian.. Hungarian paprika is way better. pepper's hang to dry in the Sun. All the peppers are grown in Hungary only. It has way more flavor. Sweet. Sweet or hot?

So according to this regular paprika is just a sweet pepper ground to a powder . Then spicy paprika is just ground sweet pepper with some cayenne pepper added. Why not just forget the paprika and just use cayenne in the first place?

@Papa F Jose You are right about Fernch Fries But what you said about paprika; almost everything is wrong about it! Maybe you should watch that video about the Hungarian paprika again, and pay more attention to what they say... There is no such thing that "pepper that called Paprika"! The word "paprika" is just means "pepper" in Hungarian and also many other languages call it something similar. Paprika=pepper. Nothing more or nothing less. It's true that originally the pepper (a.k.a. the paprika) plant come from Mexico, but it is here in Europe for centuries! People in Europe using pepper in their dishes for centuries and they even breeding their own EUROPEAN VARIETIES (Hungarian, Spanish, etc.) of the pepper plant. It's nothing like the "frenchfries" thing. That just a name of food. Plants, gardening, breeding new vegetable varieties, that's a different thing. I think, they have all the rights to make it into a cultural thing, beacuse these European people already bred their own plants. It's already thier own thing.They have all the right to make it part of their culture.

Hm, I think those of us on the north American continent are getting sweet red bell peppers, smoked or not. The paprika available to us has zero flavor. We add it only for color or garnish color.

British people have weird tastes (Americans do too sometimes) and don't really know their food isn't authentic. Whoever introduced paprika to them probably labeled this mixture as paprika when it is really a chili powder blend and now everyone in the UK thinks it's paprika. In the US, everyone thinks the mass produced, powdered Parmesan cheese is what real Parmesan cheese tastes like.

@@martyminer828 I’m from California. I don’t find cayenne or paprika spicy. But I do find other peppers spicy. At Taco Bell I ask for fire sauce (I don’t use it) cuz I don’t want the employees to think I’m basic.

The only thing paprika does is turn whatever you're cooking red. If you want some spicy try jalapeno or habanero.

Huh. Eaten paprika straight off the vine in Hungary. Eaten on many meals in Hungary and Middle East. Never had any spicy paprika nor ever heard talk of spivy paprika. I guess it is genetically modified stuff you are talking about.

“Cayenne pepper is not paprika”. They are both C. Annuum. Same species. A hotter Chile pepper is still a Chile pepper.

Paprika was ñever meant to be a hot spice, it is part of the pepper family. It is a different dimensions from tomato but with a different flavour and as such it should be treated as an earthy ingredients same as peppers wether you use small or large it is the same. The point is that you have a real earthy taste with flavour. Any paprika that is hot has been mixed it is not a hot plant, no more than a tomato .

Clearly you have never had real Paprika, as you have totally missed what makes it so special. It is the fragrant aroma that is unique to the variety of pepper that is grown in Hungary and it is not at all about "brute force" spiciness. Besides, true Paprika is a completely mild seasoning that is used to add wonderful flavor to cooked dishes and you should try it sometime before you pass judgement on something with which you are not familiar.

So she contaminated a batch BY PUTTING HER BARE FINGERS IN IT AFTER SHE HAD LICKED THEM....gross...just because she's cute-ish doesn't give her a pass. And nothing beats authentic HUNGARIAN paprika. It's NOT supposed to be spicy.
