After I have watched your video by 20 minutes, I went to the kitchen and I tried the recipe (copy paste) , I swear to God this is the best and the most tasty sauce I have ever tried, even you recipe is very very precise thank you so much man, from the north Egypt, Africa 🙌 N.B: I added a half teaspoon of Xanthan Gum to make it more smoother

Thank you so much! It means a lot! I’m pinning this comment for those who want a more “chefy” finish to the sauce! The “Xanthan Gum” will give you a unique smooth mouthfeel.

@@Chef-donkey I messed it up. I didn't use Bird's Eye chillis and I don't have a proper blender, rather only a hand held puree machine, which didn't give the consistency that I was looking for. The taste was good but not what I remember during my days of living in Durban. I'll try it again in the coming weeks once I can borrow a blender and find the chillis.

can I cook this without an oven?? just on the pan?
@Chef-donkey9 ай бұрын
Sear in pan - skin side down. Sear flesh side and turn down to medium heat. Cover with lid and let it cook slow through. Made sure to check it does not burn. Check one piece if it’s cooked through then pour a generous amount of peri peri sauce in the pan and glaze till the sauce sticks to the chicken. It’s a nice way of doing it as you get a more concerted flavour of peri peri sauce. So, to answer your question, YES 😀 Thanks for watching ✌️❤️

Hi @Chef donkey. Can you use this sauce just as a dipping sauce?

Yes, it’s an all round sauce. Good for marinade and just as a dip.

I dont know where that name peri peri came from,but its really called piri piri,its a portuguese hot sauce,brought from Africa,although I am sure your sauce tastes great.
@Chef-donkey6 ай бұрын
It’s a South African pronunciation of the fruit which later became a spelling.

Any alternative to red bell pepper?
@Chef-donkey10 ай бұрын
The red bell pepper is just so I use less chilli pepper to mellow the heat down. You can use one more tomato instead and 1 more Chilli pepper.

Tried it, although I cooked the veggies well it still had a raw taste.
@Chef-donkey6 ай бұрын
Thanks for your feedback. The funny thing is everything should be lightly cooked! Did you use extra virgin olive oil? That can make it bitter. But it should be a fruity sauce (still taste the integrity of the veggies) rather than a slow cooked tomato sauce.
@DadysvijBoct6 ай бұрын
@@Chef-donkey I didn't use extra virgin olive oil, it still has a good taste but very different from what we use to in South Africa. I guess the chili choice could gave changed it as I didn't use birds eye chili.

Tried it, think i went to heavy on the corriander and too light on the salt... has an aftertaste i cant describe, will give it another go.
@Chef-donkey3 ай бұрын
Hey firstly thanks for watching. Regarding the aftertaste: Make sure the peppers has no pith (the white part it makes things bitter) DO NOT USE EXTRA VIRGIN OLIVE OIL! - it will give your sauce a bitter after taste when you blend it. With the coriander 🌿 only use a handful. When zesting the lemon make sure there’s no white. Please, do try again and let me know how you get on ✌️❤️

@Chef-donkey thank you soo much for that!!! I'm officially a lifetime fan!!

How did turn into yellow. Ingredients almost red
@Chef-donkey6 ай бұрын
Very good question. When you blend a purée or sauce at a very high speed, you blend a lot of air into it. So those micro pockets of air make the sauce to appear lighter in colour. If I was to cook after blending it or compress the sauce in a vacuum in will extract the air and it will go back to a darker colour. Hope that helps and answers your question. Thanks for watching✌️❤️
