A trick to shorten the time they take and soften them is to boil them until a fork can easily go in, season them and then bake them (as the video says), this allows to crispen them more evenly and have a soft inside.

I've made this 3 times. I don't have simultaneous broil & bake capability so I use convection at 400F, then finish with 425F while keeping an eagle eye on them. I also tried this putting them on a cookie rack in my baking pan instead of the parchment paper. That time they cooked much faster than I was expecting and some of them were ultra crispy shall we say. The last time they came out really well, crispy outside with a creamy center. They are seriously sweet thought. I need to limit my eating or face heart burn. This is a much superior way to any other method I've tried to make sweet potato fries without deep fat involved. @@lorenajb4111 I would say the cookie rack sitting in a low side baking pan in combination with convection works better than sitting on kitchen parchment. Sorry, it's been too long and I don't remember the cooking times.

I appreciate the tips. Following the video recipe with a standard oven didn’t yield crispy and leaving them in longer as he suggests would’ve burned them. I was thinking lower/longer & maybe using the rack. Nice to know that could work. And good tip with the higher temp finish.

The recipe works with the exception of the usage of parchment paper. The sweet potatoes stuck on the paper. I used tinfoil the following time and it worked perfectly.

This is the second time im making these sweet potato fries. THEY ARE AMAZING. When i eat sweet potato fries in restaurants or from the grocery store they are very weird tasting and soggy, but these sweet potato fries are extremly delicious and crispy. Instead of the saffron mayo aioli , I use sriracha mayo! Also extremly delicious

Didn’t work for me, ended up not crunchy at all 😭 Used a regular top and bot setting, 220c. Also regular olive oil. 25min from one side, 15 from the other. Maybe I cut them too thick? The recipe with a peanut oil gave much more crunchiness but that time I also cut them too thin. Can’t find this gold middle 😂..

Followed the directions and I dont have a top and bottom heat oven. i just did 425F for 30 minutes and the bottom layer was burnt and it turned out a soggy mess. Flipped them (To the best of my ability) for 10 more minutes i allowed it to bake and each fry was soggy as hell.. before all of this I hand dried them after soaking(30 minutes) and rinsing then allowed to set and airdry for 10 minutes. Maybe it was overcooked?

You're dipped fry bent when you stuck it in the mayo (bent not broken) so just how crispy were they? You'll get better resultsif you leavethemrest for 10 minutes, brush lightly with oil amd reinsert in oven for another 10 minutes.

It'll work great. Set your air fryer to 400 degrees and check it after 10 minutes, then again every minute. Don't overcrowd them in the basket. See how they're spread out on the baking pan in this video? You need the air to circulate around each piece.

Followed recipe exactly, baked until they were nicely browned/charred but they still weren’t crispy. I may need to lower the temp and bake them longer? Still searching. Seasonings were good though.

From what I've gathered removing the starch from the potatoes helps make the inside of the fries soft and fluffy, then adding cornstarch to the outside afterwards gives them a nice and crispy exterior Sorry I'm about a year late
