Because hyderabad was part of Nizam's dynasty and the first Nizam Asaf Jah I came from Lucknow (Awadh) and was made vazier by Aurangzeb. So when he moved to deccan he took along with him the Khansamas (chefs) from awadh and settled there to found his dynasty later. So hyderabadi food is a confluence of Awadhi food with local spices.
