what if you had a farm of cows and wheat fields , you would have your own production of cheese and flower. Do u think that would give you a very big profit in your pizza restaurant since the basic egridience for a pizza is flower and cheese?

I have seen videos of people running pizzerias where they make as much of the ingredients as possible. Make, knead, separate and stack the hundreds of individual dough blobs in trays to rise for the day. Make their own varieties of sausages, meatballs and pepperoni. Make cauldrons of fresh pizza sauce. Growing the fresh mushrooms and vegetables at home. You can even make your own fresh Mozzarella from raw milk and vinegar. The focus is on having high-quality, locally-sourced ingredients and spending the time and care to make as much of the ingredients as possible instead of buying frozen expensive junk from vendors. ... But how many pizzerias spend the time to make their own ingredients? Do you have enough time in the day to do this?

I would love to see a pizzeria that makes their own mozzarella like you described but I think they come very few and far between. There’s already so much prepping that goes into the food but they probably wouldn’t want to go and make their own mozzarella as well

@@Someonelikekanye You are correct. Making fresh pizza dough, sauce and sausages are probably more important than going through the extra effort of making fresh Mozzarella (and a popular pizzeria needs a lot of cheese every day). Just not enough time in the day or employees in the kitchen for that. But I have been to a few Italian restaurants that brag that they make their own Mozzarella and it tasted really good.

@@Someonelikekanye Most of the pizzerias that claim they make fresh mozzarella actually just buy the curds from a wholesaler and then pull it in house. You can tell it's fresh by how white it is once out of the oven.

You were doing great until you started interrupting, asking leading questions and then rephrasing his answers.. We were getting good insight the first 4 minutes of the interview...stick with open-end questions and the shut up! I know it's hard but that's how you get the real deal. Over all great job.

Not sure I agree with that. Granted its not a professional interviewer (with a prepared script) but he let the owner speak and guided interview along just fine... 7.6/10, everybody knows the rules.
