why did you skim the crud only to dump out all the used cooking liquid?

Hey my friend 😊 Skimming is key to knowing when the bones are good to go ("clean"). The scum that rises to the top contains impurities, and once there’s no more scum produced, I know that I can stop. That's why I continue to skim until it stops appearing. After that, I discard the used liquid because it's no longer needed. It's all part of getting a clear broth. Cheers!

@IvanEats the scum floats and the bones sink, so you can dump the liquid and the scum at the same time no need to skim??
