Have you ever tried crinkling your parchment paper to keep it from rolling up? You crumple it like you're going to throw it away, then you smooth it back out - it'll be wrinkly but it'll actually lay down without having to grab jars and cookbooks to keep it from curling up on ya.

I used to work for McDonald back in 2002-2004. They use fast food chip style pickles(always dill of course.) And another easy way to make Mac sauce is hamburger relish, mayo and a touch of ketchup. The patties do shrink up bc they are 8/10 patties. They start out 4 inches and shine to about 3/ 3.5 inches. And the salt pepper mix you sprinkled on was on point👍

I will never tire of watching Big Mac videos!! I wanna try it with the french dressing and dehydrated onions! For the patties, I recommend having a bunch of different sized cookie cutters at your disposal so you can make a patty whatever diameter you like. Then just weigh out ball of meat (usually 2-4 ounces) and press it with your hands. They also make little squares of parchment paper for burgers that are perfect for making a bunch of patties. Nice video as always! OH also! So Delicious makes amazing American slices and they melt the best!

Vegenaise is very close to Miracle Whip. It is the only vegan mayonnaise I like it because vegan mayo is usually either way too sweet or way to vinegar sour. Vegenaise has a lot of balance. Sesame oil has a “grill” flavor so that may be an alternative 🤷🏽♀️

I worked at McDs in high school. The one thing I would add to your prep is that we would add the onions after the flip of the burger. So they'd be sitting on top of the burger while the bottom is cooking. I think it helps to soften those onions a bit and gets the juices from the meat into the burger.

@@stryke1989 this is as old as a bacon joke. Of course no matter what you do something is going to happen that we wish would not. But most crops are raised to feed animals that are being bred and tortured for food. Most crops are corn and soybeans weed and other camo green crops that are all gauge towards feeding animals that are going to be food. We eat far less vegetation and not everything is harvested in the way that you were talking about. Of course something is going to die every time somebody drives a car every time somebody leaves a banana peel out in fruit flies happen. I tend to coax them out the window or move them underneath a spider. Trying to shame somebody who's doing the best they can period which the term vegan means to cause the least amount of harm possible and practicable! Which they are doing and that sounds like more than you are you're just a weak person who would never confront somebody in person period but boy are you big when you're on here. Start paying some rent. Factory farming hurts human beings also which you probably had no clue of the suicide rate and the massive abuse of workers in the meat and dairy industry. Many of them are migrant workers and they are taught to be completely disconnected because they have to be to do their job they end up becoming almost predatory and then when they're not at work the depression kicks in the suicide rate is astronomically High. The brush up on your bacon jokes and talk about the animals that are killed by eating the least amount of food possible which is a plant-based diet. In fact just to kill a little time see how much food and water it takes for 1 lb of cow! Cows are very heavy they eat far more plants and cause far more of what you're talkin about. Get a job pay rent do something besides Troll and play video games grow up

In the 90s they had some Asian salads that as a child introduced me to Lima beans and mandarin oranges. Growing up vegetarian in Texas, that was about the only thing I could eat were the salads with out the chicken.

I've been using a copy cat Big Mac recipe for about 20 years. I used to work for Mickey D's and I can tell you it is spot on. When I went vegan, I updated the recipe EXACTLY the same way as Sauce Stache did in this video. Do yourself a favor and make this recipe. You will not be disappointed.

I think many are under-stressing the importance of the seasoning salt. The secret sauce is very important, but every burger at McD gets that seasoning and it is pretty hard to replicate and looks like you nailed it. I look forward to doing it because I miss McD burger, now do their Fish Sandwich because THAT is my favorite one ;)

I was never a Big Mac person - always chose the chicken-based fast foods as a kid. Having said that, since going vegan I am enjoying vegan burgers of various kinds so I guess this would be an ultimate one :D So much umami, awesome textures and well balanced flavours,.. it truly must have been spectacular! This looks awesome! My local vegan burger joint makes a vegan big mac and their "secret" ingredient is smushed avocado in the big mac. I know it sound weird but it just works and taste just like i remember. I don't know where the idea came from but i assure you it works!

@Sauce Stache , I worked at McD's in 1984. The "secret sauce" was just Russian dressing and mayo, and we never sprinkled any seasoning on anything, other than salt on fries. The only difference between regular burgers, used for ordinary ones and Big Macs, versus Quarter Pounders was, we were required to drain the grease from the QPs, but we were forbidden to do so from the reg ones. And all started out as frozen, never thawed. I hated that job. That factored into me going vegetarian by '89. I saw how it was made. I smelled like dozens of cooked, dead animals when I got home. My last Big Mac was probably sometime in 1987. I used to eat two at a time, with two large fries, a chocolate shake, and a super-sized diet cola. You know. Because, America, or whatever. Vegan for just over 3 years now, and my bloodwork looks like when I was in my 20s. Almost 30 years lacto-ovo helped, but I didn't feel right, ethically. Now, I'm fine. I'm 53, going on 120.

This vegan Big Mac is extraordinary! I'm not a burger afficionado, but I did work the grills at McDonalds as a teen (1985) and these are impressive! The patties looked perfectly sized and you nailed the dehydrated onions. They went in water daily and went on at the flip of the burger as did the cheese. Outstanding recreation that should impress everyone alive, even the deceased McD's CEO Ray Kroc.

I just received your cookbook and it is pretty great, but I wish to make one point. You added a recipe for grapefruit "chicken," but I remember watching the episode and you didn't really like the result. I was hoping the book would be "best of show" versions of each meat type, kind of like the culmination of what you've learned and the best variants to your taste. I am excited to try this, quick question though; the French dressing - is this necessary? From the ingredients it seems that you've got everything in there, except for salt, celery powder, chili powder and obviously ketchup, which is tomato and balsamic. The Heinz sweet relish is more pickled cucumber, basically dill pickles. Perhaps using smoked paprika or liquid smoke to replace the grill flavour?

This looks great and my mouth is watering watching this video. But when vegan food gets a little too close to the non-vegan original I sometimes feel a little queasy. Your seasoning sounds way better! I used to Manage a McDonald's back in college and the only seasoning that goes on the meat is salt and pepper. No oil is added to the grill top. It marinates in its own juices on a flat top. The burgers are cooked by smashing them under a clamp top. Then transferred to a hot station where they sit in the juices until served or tossed. If you could come up with "juices" to cook in and rest in, that would be a small dunk! Veggie burgers tend to be pretty dry.

What they mean in the smoky flavor of this sunflower I’ll let you know the grill flavors they call it is they take sunflower seeds and you kind of roast them and then you basically blend them and separate out the oil it’s a process and I’ve done it before they had all those fancy things that you could get and it’s not easy and it takes forever I was in better shape back then we’re talking more than 25 years ago closer to 30 but it does taste absolutely delicious in fact sunflower seeds when ground give a real almost peanutty flavor to things and when you roast them while you get from it is really delicious but like I said it’s a process and it takes forever and you need a lot to do it I was just looking to get kind of like 2 to 3 ounces so I could use it with a dropper it was more trouble than it was worth.

@@SauceStache I laughed when I saw you use the lid from your methylcellulose container to size your burgers. I have the center insert from an old Hamilton Beach Sandwich maker. Serves the same purpose, and is nonstick.

There is a place in Disney Springs, I believe is where it was, that sells spices and they have the grill powder. Its expensive though...

Also, pro tip for "cooking" really thin patties and them not sticking is in the microwave on a ceramic plate. And lets be honest, microwaving it is probably more authentic anyway... 🤣🤣🤣🤣

Thanks for making the Favs! i used to love the Big mac and the 2 cheeseburger meal at Macdonald's .. ! yummmyy... but no.. i dont want animal lol... Can you make a bacon wrapped hot dog.. I used to get the street dogs in SF after a night out... sooo goood... !

Hellmann’s vegan mayo is pretty dope. Btw I like the taste testing at the counter. Seems a little less awkward. When u sit down it’s like the viewers are intruding while you eat lol maybe just me.

I agree Hellmann's vegan is awesome. Apparently the mayo to use here is more akin to the Miracle Whip flavor which I agree with some other commentors is more similar to say, Vegenaise my Follow Your Heart :-)
