This is such a great channel. No rambling or pontificating. Straight to the point, loads of great information, no fancy or crazy equipment or methods. And a host with a relaxing voice and a good audio setup. As long as you don’t suddenly get political (like every other person on KZbin unfortunately) I’ll be sticking around. What a gem. I duno why this channel hasn’t grown more.

It's refreshing seeing ribs done without wrapping. I don't know if he still subscribes to this, but I generally follow the Meathead philosophy and don't wrap my ribs unless I'm intentionally trying to speed up the cook. I generally don't spray/mist them either, but I get it. I do sometimes sauce them and/or throw them directly over the hot coals at the end for a little char. For those thinking, "That's great, but what if I want to cook more than 1 slab at a time?" Weber makes a rib rack: do the same setup shown here, but have the coals only one side. Then place the ribs in the rib rack so that they're all lined up over the indirect/cool side. You should get 3 slabs on there. Just rotate the 1st and 3rd slab halfway through since one of those will be closer to the fire. You may need to add a few coals during the cook depending on how much you had on the hot side.

Hello Brad. As a rule of thumb I don't wrap my ribs or porkbutt. I will sauce them if my guests want it that way but when I am cooking for me... no sauce.

Hey Johnny ! I wanna tell ya, until this video, I always had trouble with my temp control. Tried the snake and a bunch of other ways on my Weber Kettle.. Never worked. I figured after watching this one : this makes sense...why not use it the way it was designed ? And in my case at least, on my 26'' and a bit more fuel, the baskets are perfect ! So keep 'em coming Johnny, I am a better griller and smoker thanks to you !

That's very interesting! I use Weber Kettles exclusively and I didn't know about the app. I've definitely used the setup, but not for ribs. Because the drawback for using that setup is that it only allows room for one rack. It's only me and my wife at my house and I seldom if ever do a single rack of ribs. Even for things like chicken that configuration just doesn't leave enough room.

Hey Ron. Not enough room is defiantly a draw back. You could use a rib rack where you smoke ribs on thier side or you can use the kamado style configuration I show in another video.

I’m going to give this a shot today. Although I wish there was a way to cook two racks on the kettle because at the same time because my pack of ribs is a two pack. Thanks for mentioning the intended way of use it sure helps with figuring out the temperature of the grill. I was cooking with coals only on one side and meat on the other but would render my thermometer useless because it would be right over the coals and I don’t have a dedicated grate thermometer. Any tips on how to cook more than one rack on the grill with this method? I’m going to try to use the semi-circular grate that’s meant to be used on the edge of the grill to get another rack on there we’ll see if that works out.

Hello Artemio. Have you seen my Kamado Style on the weber kettle video. You have to get the sear plate, but if. you use that method, you can get three racks of ribs on the kettle. The sear plate is a great investment because you can use it as a flat top... just put it on top of your grates and heat it up for smash burgers.

The ribs look great! Nice job! 👍🏽 I’m interested in the pickle juice. Obviously used for moisture. Does it tenderize as well? Does it add any flavor to the ribs?

Hey Johnny. Technically yes, pickle juice will tenderize because it is vinegar and vinegar is an acid which tenderizes meat. Will it tenderize the ribs while they are cooking… probably not. But if you believe in the cumulative affect and every little thing you do produces a better outcome then why not use pickle juice? Now folks can get into big arguments as to if it adds flavor or not. I would say try it and see if you like it.

Hey Johnny, I'm new to grilling & did my first full rack of spare ribs using this layout & just like in this video my left side never took off while my right side basket burned all the way down. In your experience do you find using two baskets on opposing sides will almost always result in this happening? ( survival of the fittest & one basket will choke out the other for oxygen ) is one large basket in an offset the better method. Thanks brother for any help & loving your channel!

If you only have the lid thermometer then use this method if you have an after market thermometer then use the indirect method.

Is there any benefit in only lighting say 10 briquettes in the chimney starter and then adding them to the unlit briquettes in the baskets vs lighting a full chimney and then adding these to empty baskets ? Great cook by the way. 👌🏼

Hello Dean. Bobert is absolutely right! Starting off with a small amount of lit charcoal allows the Kettle to come up to temp. If all of your charcoal is lit when you put it in for this cook... it would be too hot. @Bobert thanks!

How do you get past the stall unwrapped?

Wrapping is not necessary to get past the stall. Wrapping gets you through the stall faster. Wrapping is known as the Texas Crutch and is used to speed up the cook. When you don’t wrap it will just take a little longer.

Hi Johnny, thank you for sharing this video. Just curious, as I'm a rookie, why do you use dill pickle juice, and are there other options? I didn't even know this was part of the slow cooking/smoking process. Just want to learn, not being critical or anything.

Hello John. That is actually a great question. There are some folks that say that they can taste the spritz.... and some say the spritz adds no flavor at all.... In BBQ you will find that there is an alternative to everything you do with folks on both sides. That is why it would be good to watch other BBQ channels... saying that. Pickel juice is tangy and it has vinigar in it... Theoretically,... it could add a little zip of flavor ... and because vinigar is an acid it could potentially help tenderize. You will see folks use just tap water to spritz... others will use apple cider vinigar... others... W-sauce and water, I have seen folks use beef broth, the point is... find what you like and use that. I hope that helps... take care John.

Why would you be concerned about evening out the baskets as long as your temperature was good and you had enough fuel? Other methods like the slowNsear only cook from one side anyway
