These look so light and fluffy. I love using fresh lemon juice, it adds such a fresh taste and a little zing as well. I'm one to add a lot of lemon, but sometimes it is just nice to add a little to have that flavor hint at the back of the mouth 🤗 I might have to give these cookies a try! Thank you so much 🤗 The different sections has been out for a year or two now I think, you just have to put the time codes in the description (you can see mine for an example in brackets), and it should divide it up for you automatically, give it a try! :)

Could I use cream cheese instead of ricotta cheese?

You could, it wouldn't be exactly the same and you'd have to play around with the ratios and amounts to adjust the moisture levels in the cookie dough, but I haven't tried to substitute it in this exact recipe before, so let me know how it goes if you do try it! I have made cream cheese cookies with a different recipe before and they are delicious though!
