Being Asian (Chinese) I love fermented dot bean curd! I include it in my darker leafy green stir fry, with other veggies and tempeh on top rice. So good! Ahhhh the secret ingredient it out!!!

@@jackiegibbins2675 Since I am not familiar with the cup measurements I just used it to my taste. It might not be substituted for the soybean curd one-to-one. But it's important to use the white miso paste not the dark one to avoid a change in color. And you should also use a high-quality one because the cheaper miso pastes tend to taste just like soy sauce without the important note of fermentation. :D edit: I just was wondering If it might work out as well with some mashed tempeh... It also has this strong cheesy note.

Funny furry baby, so darn cute. I do miss feta cheese, I liked it with tomatoes and of course in a Greek salad. When I find the ferment I will really need to make this "tofetta" great name for it. I met a young man that works at World Market in Clear Lake city, Texas and we found that we both really enjoy your channel. I use crumbled feta on my romaine lettuce salads. What would happen if I crumbled the tofu? What would happen if I used extra firm tofu? i am going to get some fermented tofu and try this b/c I am trying to go vegan, although I use very little dairy products.

Why exactly are we simmering the Tofu? I made this recipe yesterday. I used extra firm tofu, since that's what I had. And still, the result was very mushy. The taste was lovely. I definitely will cut the salt down to 2 TBSP, as 3 was too salty. I went out and bought "super firm" tofu and can't wait to see how it comes out. I want it to be perfect, as I need it for a dinner I'm hosting and I'm making a Greek Salad. I really don't want a mushy feta. Fingers crossed.

Hey Nancy - how did yours come out??? I made this yesterday, and you are right 2 to 3 Tbsp was just too much. It was terribly salty. And mine came out like mush. the recipe calls for Medium Firm Tofu and I had Extra Firm Tofu, which I figured that for sure it would not be mushy. But nope, it was mushy. I just picked up Super Firm Tofu by Wildwood, so I'm hoping it will turn out much better. And I won't be using that much salt.
