Mom used to make roasted chicken on Sunday and serve it with two sides: mashed potatoes and corn. It was the one night a week we, as children, didn't have to eat green veggies. My all time favorite I think are flautas de pollo ❤ but tacos de papa are a close second!! Sometimes I’ll add a little bit of corn starch to my leftover mashed potatoes to help “thicken” them when I use them for tacos

I make these all the time and I agree they our go too taco on a weeknight. Sometimes I use sweet potatoes. and if your really in a hurry you can used canned sweet potatoes, but again no butter or liquid should be added to the mix. Great video....again!

My kid’s grew up eating potatoe fried tacos but I always added Monterrey cheese or or Colby cheese I would added some olive oil and sautéed my smashed potatoes until the cheese melted then I would fried them and add lettuce tomatoes salsa and cotija cheese or Parmesan cheese so delicious 😋

We put queso fresco in the potato mixture before we put in corn tortillas, and used to use can tomatoe sauce to dress the tacos with shredded cabbage and more queso fresco , now we use homemade salsa
